Persimmon leaves are the fresh or dried leaves of plant persimmon (Diospyros kaki L. f.) . Persimmon leaves have the upper nutritional value and medical care function. Persimmon leaves have abundant nutriments such as vitamin C, rutin, choline, flavonol, carotenoid, multi-amino acids, iron, zinc, calcium and etc. Persimmon leaves have the medical care function of antimicrobial and diminish inflammation, satisfy one's thirst, detoxifcation, wet one's lung and cardiotonic, relieve a cough and hemostasia, anticancer and protection against the cancer. Therefore the exploitation of persimmon leaves has aroused people's recognition. There already have some reports about the chemistry composition contents of persimmon leaves, but there will have different chemistry composition contents of persimmon leaves with different producing area and different seasons. And there still haven't any reports about the dynamic chemistry composition contents of persimmon leaves. The technical parameters during the manufacturing process of An'xi persimmon leaves were not reported.There is a hundred thousand acre persimmon in An'xi county Fujian province, but the persimmon leaves still aren't exploited. This paper is to choose the highest active composition contents of An'xi persimmon leaves to manufacture green persimmon leaves' tea by studing their dynamic chemistry composition contents. The technical parameters during the manufacturing process were also studied. The results are showed as follows:(1) An'xi persimmon leaves are almost grown up, the water content is hardly changed and the contents of chlorophyll, carotenoid, flavonoid, vitiman C, and polyphenol are almost the highest on September. The persimmon has fructified on September, so picking leaves will not affect fruits, but be propitious to ventilate and permeate light. After October, the persimmon leaves become to aging, the contents of chlorophyll, carotenoid, Vitiman C decline, and the content of cellulose increases, so they are unsuitable to manufacture. So the optimum harvesting time of An'xi persimmon leaves are September. Contents of the major nutritional components in the An'xi persimmon leaves on picking time are high, and there are many kinds of amino acids and their contents are rich.
