Resistant starch is sum total of the starch which is absorbed by the healthy human body small intestine and its resolvent, which has kinds of physiological functions, such as adjusting blood sugar, controlling body weight and promoting the digestion of mineral substance. However, in the experiment process of research resistant starch controlling blood sugar, we discover that after feeding the SD rats with the resistant starch for a long time, the blood sugar level of the rats tends to be increasing. This phenomenon has greatly reduced the physiological functions of resistant starch. The paper obtains a number of high resistant starch products by changing the physical and chemical properties of resistant starch, and test feasibility to overcome biological self-adapteive of resistant starch.In accordance with the experimental result of Fan Zhendi, we adopt the enzyme -gravitational method to measure the content of resistant starch.Take the resistant starch rate as the target, optimized condition to improve resistant starch rate of lotus, kuezu, mung bean and rice by pullulanase auxiliary method. Lotus root's optimum condition was: dose of pullulance of 27 aspu/g,enzymic time of 65 min and cold storage time of 33 h and the resistant starch rate of 10.26%.Simultaneously, uses the orthogonal testing method to study common rule of raise resistant starch content. The experimental results indicate that the changing curve of each factor has no significant change, although the kinds of starch and the optimum parameters are totally different. Each factor's influences are in an order: milk density of starch, cold storage temperature, the dose of pullulance, the enzymic time of pullulanase.This experiment adopts STZ 65 mg/Kg to induce production of type II diabetic rat as models by abdominal cavity injection, and feed these rats with different resistant starch. SD male diabetic rats were randomly divided into four groups, the normal rats are divided into three groups, Each group of 10, Keep raising rats for 14 weeks, and examine the body weight and blood sugar once a week. The research proves the types of feedstuff as well as raising ways do not have great influence on rats' blood sugar in the normal group, and the amount of blood sugar is about 5 mmol/L; In the first 4-6 weeks of raise the rats with various types of modified starch, we found the effect reducing the blood sugar level of single lotus resistant starch gradually decline, that indicates SD rats may have been adaptive for this starch. Furthermore, in the last seven weeks, we discover that exchanging three kinds of starch to feed rats has a good effect on controlling rats' blood sugar. The coat colors shoe that the feedstuff exchange group rats were micro-yellow, while 2% RS lotus root physics starch group are light yellow. It is clear that exchange feed rats with the different kinds of resistant starch can overcome self-adaptive phenomenon effectively. Consequently the feedstuff is able to improve the symptoms of rats in a long term.We discovery that DSC atlas vary from starch processing by constitutive property analysis of lotus root resistant starch. The transition peak temperature and transition enthalpy of the modified starch, whose physical and chemical properties are modified, are all reduced. Through X-ray diffraction patterns, we found that the high microcrystalline content is less than the original starch. Because the orderly arrangement in particles crystalline region of modified starch was disrupted, and to some extends the crystallization structure gets destruction. And observe the structure of starch granules by scanning electron microscopy (SEM), we discover modified starch granule structure gets serious damage and already lose circular structure of granular in the original starch. Through the above instrumental analysis discovery, change of starch constitutive property has the obvious influence on blood sugar value of rats.These modified starch, low dextrinize enthalpy value,low crystallinity and extremely disarrangement of structure,have a better effect of lowering blood sugar value.
