High pressure biology is a new cross-field of high pressure physics and biology. Now, the effect of high pressure to thermodynamics parameters,kinetics characteristic and regulatory mechanism of biosystem and the molecular mechanism of high pressure to nucleic acid and protein have been studied and acquainted widely.In this paper ,we aim to study the influences of high pressure to biosystem, acquaint and master disciplinarian and specialty of biosystem ulteriorly. Furthermore,we selecet and breed excellent beer yeast (Saccharomyces cerevias) with modern high pressure biological technology.High pressure will be a new physical mutagenesis breeding measure, possessing some excellences of easy-doing,no pollution and higher mutation rate.In this paper, we analyzed the change mechanism of Saccharomyces cerevias under high pressure and elementarily probed changes of geometrical model of Saccharomyces cerevias treated by high pressure. Also, we selected excellent variation strain of beer yeast and mensurated its primary fermentation capability. We studied effect of difference pressure and variance time to cell killing of Saccharomyces cerevias, probed relation of high pressure and beer yeast mutagenesis.Then it was found that Saccharomyces cerevias had higher mutation rate at the pressure of 300MPa within 30 mins.
