The issues of national nutritional health and food nutrition safety have gradually become major strategic issues in the construction of the national quality of our country.China is a large agricultural country.According to the results of the sixth national census,the population living in rural areas accounts for 50.32%of the total population.Therefore,the nutrition and health of the rural population is not only an important guarantee for building a well-off society in an all-round way,but also a strong cornerstone of my country’s social and economic development.In addition,the nutrition and health of the rural population is also an important topic in the current analysis of the feasibility of increasing the income of farmers.The improvement of farmers’ nutritional intake is a dynamic process.The impact of farmers’ nutritional intake on their healthy human capital and their income level and poverty status is also a dynamic process.The three are gradually produced through a series of phenomena and paths.The effect of increasing farmers’ nutritional income and reducing farmers’ nutritional poverty is essentially to improve the economic level of farmers by improving their healthy human capital.Among them,the significant difference between the two is that the increase in farmers’ nutrition income can be explored through the theory of healthy human capital to discuss the rate of return on health investment.However,the effects of nutrition intake on the increase of farmers’ nutrition income and the reduction of farmers’nutrition poverty are affected by the accumulation of health human capital and the vulnerability of livelihood capital.Therefore,this study suggests that:Farmers’ production structure and external market conditions affect farmers’ nutrition intake level through farmers’ food access path,and farmers’ nutrition intake affects farmers’ nutrition income increase and farmers’ nutrition poverty reduction effect respectively from the accumulation of health human capital and livelihood capital poverty vulnerability.In short,from the perspective of farmers’ nutrition intake,this paper discusses the feasibility and importance of the effects of farmers’ nutrition income increase and nutrition poverty reduction.To this end,this paper will start from the characteristics of farmers’ production and consumption,take the farmers’ nutrition health as the goal,systematically sort out the mechanism of the influence of farmers’ reasonable nutrition intake level,and further study the causes of the differences,and further explore the feasibility of farmers’ nutrition health to increase income and reduce poverty.Based on the above problems,this paper first defines the concepts of production structure,nutrition intake,nutrition income increase and nutrition poverty reduction of farmers in China.Secondly,combing the theoretical basis of nutrition and health and income improvement and related literature at home and abroad,to provide the research basis for this paper.Then,using the data of China Health and Nutrition Survey(CHNS),five rural survey data were selected for analysis in 2000,2004,2006,2009 and 2011.Based on the above research framework,using literature review,descriptive statistics,comparative analysis,empirical analysis and other research methods,and based on the theoretical mechanism of food access right,this paper analyzes the main factors affecting farmers’ nutrition intake.On this basis,this paper analyzes the effect of increasing nutrition income and reducing poverty of rural population in China.The main contents and conclusions of this paper are as follows:(1)Research content 1:The impact of production structure on farmers’ nutritional intake.Based on the theory of food access right,this part analyzes the impact of farmers’production structure and regional market conditions on Farmers’ nutrition intake and its mechanism by combining two food access paths of agricultural production and market purchase.In this paper,farmers are divided into economically disadvantaged households and non-economically disadvantaged households according to the poverty line standard.At the same time,the data of China Nutrition and Health Survey(CHNS)from 2000 to 2011 were used for empirical research.The results showed that,compared with the specialized production,the production diversity could effectively improve the nutrition intake of farmers.Secondly,regional market conditions will affect the nutrition intake of economically disadvantaged households and non-economically disadvantaged households in varying degrees.For economically disadvantaged households,market conditions have a significant impact on their carbohydrate and fat intake,while improving their income level has a limited effect on their nutrition intakes.For non-economically disadvantaged households,market conditions can effectively improve their dietary structure and nutrition intake.At the same time,improving the income level of non-economically disadvantaged households has a significant impact on their nutrition intake.(2)Research content 2:The effect of nutritional intake on the income increase of farmers.According to the research hypothesis of human capital theory,this part further studies the impact of farmers’ health on Farmers’ income,and focuses on the effect of farmers’nutrition level on heterogeneous farmers’ income.This paper introduces health human capital into the income function of Mincer,and uses the data of China Health and Nutrition Survey(CHNS)to test the effect of farmers’ income increase.And based on the individual differences of farmers,combined with the intermediary transmission mechanism of farmers’ labor supply time on Farmers’ nutrition income,this paper discusses the specific effect of heterogeneous farmers’ nutrition income.The empirical results show that the nutrition level of farmers has a significant impact on the income of farmers.Compared with other health indicators(BMI index and health self-assessment),the regression results show that the level of nutrient intake of farmers plays a more positive and effective role in increasing their income.Secondly,there is significant heterogeneity in the effect of farmers’ nutrition level on the income increase of farmers under different production subjects,different age stages and gender differences.The effect of farmers engaged in diversified production is more significant and better than that of farmers engaged in professional production.The effect of nutrition intake on Farmers’ income growth is consistent in different age groups.Intake of carbohydrate has a significant negative impact on farmers’ income growth in all age groups.However,protein intake has a significant positive impact on the income increasing effect of all age groups,and gradually decreases with age.The effect of nutrition income increase in men was significantly higher than that in women.In the regression results of the mediating effect of working time on the increase of farmers’ nutrition income,the nutrition intake of diversified production farmers,male farmers and middle-aged farmers will significantly increase the working time of farmers,and then increase their income.In addition,after fully considering the endogeneity of farmers’ income and nutrition intake,the lag one-stage nutrition intake variable is added as a tool variable to test the endogeneity of nutrition intake effect on Farmers’ income.On this basis,"know about Chinese dietary guidelines?" is selected as the instrumental variable of farmers’ nutritional level to test the endogeneity of farmers’ nutritional health and income.(3)Research content 3:The impact of nutritional intake on the poverty reduction effect of farmers.This part mainly analyzes the implementation effect of nutrition improvement on Farmers’ poverty reduction by investigating whether the poverty situation of farmers has improved,and further discusses the regulatory effect of livelihood capital on Farmers’nutrition poverty reduction.Based on the data of China Health and Nutrition Survey(CHNS)from 2000 to 2011,the marginal utility of farmers’ nutrition on poverty reduction was evaluated.The empirical results show that compared with other health indicators,the nutrition intake level of farmers plays a more positive and effective role in poverty reduction.Secondly,the improvement of farmers’ nutrition has a significant impact on the poverty reduction effect.Specifically,the improvement of farmers’ fat and protein intake can significantly improve the poverty reduction effect of farmers.In addition,this part further investigates the poverty reduction effect of farmers’ nutrition level on different production subjects,different age stages and gender differences.The empirical results show that the effect of nutrition poverty reduction is more significant and better than that of the farmers engaged in professional production.The effect of nutrition intake on poverty reduction is consistent in different age groups.Fat intake significantly affects the poverty reduction effect of young and middle-aged farmers,while protein intake significantly affects the poverty reduction effect of all age groups,and gradually decreases with age.In addition,in the regression results of the regulatory effect of livelihood capital on Farmers’ nutrition poverty reduction,after considering the interaction between nutrition intake and livelihood capital,the interaction between nutrition intake and livelihood capital has a significant impact on Farmers’ nutrition poverty reduction.Among them,the interaction between human capital,financial capital and farmers’ nutrition intake has the most significant impact on Farmers’nutrition poverty reduction effect.Finally,the paper summarizes the relevant conclusions,and discusses how to achieve the goal of stable economic development of rural population by increasing income and reducing poverty through nutrition.First of all,in order to effectively improve farmers’nutrition,we should encourage economically disadvantaged households to diversify production,vigorously promote infrastructure construction,and strengthen the popularization of nutrition knowledge and nutrition intervention.Secondly,based on the analysis of the effect of increasing farmers’ nutrition income and reducing poverty,the results show that the effects of increasing farmers’ nutrition income and reducing poverty are significant.The increase of farmers’ fat and protein intake will significantly promote the effect of income increase and poverty reduction,while the increase of farmers’ carbohydrate intake will significantly inhibit the effect of nutrition income increase.It is worth noting that through the sub sample regression of different age groups of farmers,it can be found that there are differences in the income increase and poverty reduction effects of farmers’ nutrition under different age groups.Therefore,in the implementation of nutrition intervention,we should focus on fat and protein nutrition interventions.For groups of farmers with low marginal utility of nutrition income increase and poverty reduction under different sample classifications,such as female farmers and elderly farmers,accurate and effective nutrition intervention measures should be implemented for these farmers.In addition,we should fully understand the analysis of livelihood capital’s vulnerability to farmers’ poverty,and focus on the moderating effect of human capital and financial capital in the livelihood capital on Farmers’ poverty reduction in order to improve the efficiency of farmers’ poverty reduction and effectively prevent economically disadvantaged households from returning to poverty.In order to achieve the effective growth of rural population income,we should effectively improve the nutrition and health of farmers,comprehensively improve the health human capital of rural population,and improve the competitiveness of rural population in the labor market.
