| Modified starch has a wide range of applications in the field of food application.Generally,it can be added to meat products,dairy products,drinks,and other food,used as a thickener,water retention agent and emulsifier,etc.,to improve the taste and quality of products.China is a big,but not advanced producer of edible modified starch.China’s highend edible modified starch market is controlled by foreign enterprises monopoly,such as Roquette,Taylor,National.The edible modified starch produced in China is characterized by a high level of product homogeneity and a small product adjustment space.Compared with foreign monopoly enterprises,Chinese modified starch enterprises face the issue that there is a disconnection between production technology and application research,also,they lack the ability to customize products according to the demands of customers.In this paper,the raw starch database was firstly constructed,and a testing system was established for the processing properties of raw starch.Meanwhile,three types of edible modified starch pilot production processes were developed,and the relationship between different processing conditions and product properties was studied.The starch produced on a pilot scale was applied to six kinds of food systems to test the performance of product performance.In the end,the original starch production line was reformed,and a pilot production device was designed which has the flexibility to switch to produce various modified starch.The detailed research contents are as follows:In order to ensure the stability of the character of the modified starch products,serious test methods were set up,including a polarizing microscope,electron microscope,and X-ray diffraction,to determine the character of raw starch materials.Using this method,the raw materials of three modified starches(acetate starch,hydroxypropyl starch,and phosphate acetyl starch)which are well used in the market were analyzed,which laid a foundation for the development of the following pilot process.Three pilot production processes of edible modified starch were settled,including: acetic ester starch with cassava starch as raw material,acetic anhydride added 1.8%,p H 8.0-8.5,temperature 25℃,reaction time 2h;acetylated phosphate starch that using cassava starch as raw material,the crosslinking reaction temperature was 40℃,crosslinking reaction p H 10,the amount of crosslinking agent was 0.7%,the crosslinking reaction time was 2h,the amount of acetic anhydride was 3%,the esterification time was 1.5h,the esterification temperature was25℃,the acetyl group content was 1.204,the binding phosphorus content was 0.0165;hydroxypropyl starch that using waxy corn starch as raw material,reaction time 20 h,reaction temperature 40℃,p H11.0,propylene oxide 5%(starch dry base),anhydrous sodium sulfate12%.The three modified starches developed in this research were compared with market products that have good applications respectively,and their application performances were improved.In view of the development of denaturation starch,respectively in meat products(sausage),dairy(stir yogurt),beverages(peanut protein beverage),sauce(catchup),flour products(instant noodles),pastry(the Swiss roll),has carried out applied research in the system.By comparing the performance characterization and sensory evaluation,the quality of these developed foods were all improved.The goal is to prepare different products through process adjustment,the general process flow chart of hydroxypropyl modified starch device with flexible switching production was designed.And the design of each process unit of the whole process was refined.More detailed requirements for core equipment and key control points were put forward,and the whole process block diagram of the hydroxypropyl modified starch device was finally obtained.Process pipeline and instrument flow chart(P&ID diagram)of 5000 tons/year hydroxypropyl modified starch plant were drawn.The selection and design of storage tank,cyclone,centrifuge,and dryer can be further carried out according to the preliminary flow chart of pipeline and instrument and the description of specific process flow,therefore,the construction and operation of hydroxypropyl modified starch device from the results of the small test can be further improved into the pilot test system.Ultimately,the purpose of industrialization and engineering production would be achieved.In this study,the physicochemical characterization methodology of raw starch and modified starch has been developed,the database has been preliminarily established,the product development and application have been combined,the relationship between modified starch and food application evaluation system has been established,the technical level of modified starch in China has been comprehensively improved,the developed technology has been applied to actual production through engineering,and the gap with foreign advanced technical level has been gradually narrowed. |
