| The purpose of this study was to develop and implement a six-week nutrition education workshop for African Americans and evaluate the workshop's effectiveness at increasing participants' knowledge and self-efficacy and improving dietary behavior. This study used a quasi-experimental one group pre-test/post-test research design. The six-week nutrition education workshop resulted in statistically significant changes in participant level of knowledge, dietary behavior, and self-efficacy. Results revealed a non-significant positive correlation between participants who previously altered recipes to be healthier and post level of knowledge and post dietary behavior, yearly household income and post level of knowledge and post self-efficacy, and age and post level of knowledge and post self-efficacy. Additionally results showed a non-significant negative correlation between participants, who previously altered recipes to be healthier and post level of self-efficacy, yearly household income and post dietary behavior, and age and post dietary behavior. |
