Variables that impact the value of red meat production

Abstract/Summary:
The objectives of this study were to increase data collection consistency and to measure the differences between university personnel and Agricultural Marketing Service (AMS) data collectors' calls on certain cattle characteristics and to quantify the value for phenotypic traits and determining the existence and magnitude of price premiums for certain characteristics of the lots sold. Data were collected in the fall of 2010 at four feeder cattle auctions at Oklahoma City West Stockyards in El Reno, Oklahoma on November 3, 2010; November 10, 2010; December 1, 2010; and December 8, 2010. In all, 407 lots of cattle representing 9,120 head were matched and utilized in this study. The selling price for steers (;The objectives of this study were to determine the variables that impact the value of live hogs and the affect of different factors on pork eating quality and color in fresh pork and this experiment utilized Yorkshire (n = 8), Hampshire (n = 7), and Duroc x Landrace x Yorkshire crossbreds (Danbreds); (n = 88) and Yorkshire (n = 17) fed a 9 g level of PayleanRTM. Pigs were fed a commercial diet (16% CP). Yorkshire pigs supplemented with PayleanRTM received the highest grid and price differentials (P < 0.05). Danbred pigs achieved the highest ADG (P < 0.05). The Yorkshire pigs fed PayleanRTM had larger LEA as compared to Yorkshire pigs not supplemented with PayleanRTM (P < 0.05). Breed and diet did not have an effect on muscle color, marbling, firmness, or texture of LM. Tenderness of LM was lower in Yorkshire pigs fed PayleanRTM as compared to Yorkshire pigs not fed PayleanRTM (P < 0.05). A decreased cook loss % was detected for Yorkshire pigs fed PayleanRTM than Danbred pigs (P < 0.05).
