Table grape is much loved by public for its unique flavor and antioxidant. But the grape is a perishable fruit, intending to decay, deteriorate, berry shatter and so on. Therefore, after conducting the research of table grape logistic stability in the respect of environment and preservation technoloty, the logistics process will be more accurately and clearly, could keep a stable supply of the qualitify table grape stabilityIn this paper, kinetic method of quality, Contour line, multiple statistics analysis is the means to construct the evaluation method of logistics stability based on the preservation technology, Contour line and Time Temperature Indicator (TTI). This method could evaluate the logistics stability of table grape in the respect of technologies and environment temperature. The detailed conclution is followed:(1) The quality changes of table grape is the result of an effect on the action of microorganism, the process of breathing and transpiration. During the logistics process of table grape, temperature and preservation technologies are the key factors affecting the quality changes of grape and logistics stability obviously. Therefore, assessing the effects of temperature and preservation technology to logistics stability will help to improve the quality of the table grape throughout the logistics.(2) Controlled atmosphere, preservative film,1-MCP a series of SO2preservation measures and ice-temperature-high humidity can effectively reduce the loss of the fruit and keep its logistics’stability. Meanwhile, the effects of these technologies are affected by the technologies themselves, variety of grape, application time and so on; controlled atmosphere storage and preservatives’impact on the stability of table grape logistics enhances with the course of time. Besides, using overmuch preservatives will increase the loss in weight of fruit; while SO2can enhanced effect of the preservatives on waste of the fruit.(3) Both firmness and weight loss are well correlated with the satisfaction of consumers at a high level, and the two indices are properly to be the critical indicators of the logistic stability of Muscat grape.(4) An evaluation method based on contour diagram is put forward to evaluate the logistics stability conveniently and intuitively. The result shows that the evaluation result of Muscat grape logistics through the contour diagram is closed to the result from the traditional kinetics method, while the critical deadline of contour diagram method is much closer to the observations than the traditional method. Therefore, the contour diagram method proposed in this paper can evaluate the logistics stability with multiple indices and varied temperature.(5) TTI is a monitoring device whose color would change for evaluating the logistics stability timely and visually based on the TTI. The result shows that the differences between the contour lines of the agricultural produce and TTIs is positive correlated with the differences between the Activation Energy of them, which confirms the reliability of the TTI selection method based on Contour lines. Because of the omission of the creation process of kinetic function of traditional method, the contour diagram method could select the proper TTI conveniently intuitively and quickly. With this method, it could be convinent to select a TTI to monitor logistics stability of Muscat Hamburg visually.(6) Through the compariment of the TTI by use of the selection method, the result shows that Vitsab M25-2TTI is the best candidate for monitoring the firmness of the Muscat grape, but it has a bad effect on the weight loss the table grape. the TTI of OnVu(4s) could be considered as the best candidate to monitor both of the weight loss and firmness for the mean relative deviation is below15%,and the TTI is suitable to monitor the logistics stability of Muscat Hamburg.
