Vineyards requires numerous pesticides to maintain the adequate yield. It is therefore important to develop the quick detection and analysis methodology adaptable for various area and countries to monit or the pesticide residue introduced during the grape cultivation and enological process in market. In this dissertation, the modified solid phase material dispersion purification method was applied in order to est ablish the pesticide analysis method for the processing substrates. And also the analysis method was app lied to the research of producing coefficient and market monitoring.The established 19 pesticides multi-residue detection methods for grape, trester and wine were applied in pesticide residue detection for grape fermentation process. The processing factors of the 19 pesticides in wine varied between 0.00-0.82 for two grape varieties. The fermentation procedure did not affect the residue of Azoxystrobin, but lowered the residue of other 18 pesticides.7 pesticides, Pyrimethanil, Azoxystrobin, Cyprodinil, metalaxyl,Boscalid, Procymidone, Penconazole with high positive rates were found in brewed wine during fermentation procedure.Through the m-PFC purification,111 pesticides of multi-residue analytical methods were establish and applied to the pesticide residue detection from the tap water rinsed, ALEW rinsed and CIO2 rinsed grape. The analysis results showed that:the A1EW cleared away over 90% residue of 6 pesticides, and 50% residue of 69 pesticides. It is recognized that the cleaning effect of A1EW was the combinational outcomes of active chlorine, pH value and ORP. The ClO2 cleared away over 50% residue of 59 pesticides, among those 59 pesticides,23 pesticides with their 90% residue cleared away. Generally, those pesticides cleared away by ClO2 were organophosphorus containing unsaturated P=O bonds or cyclic unsaturated hydrocarbon bonds (such as cyprodinil) through oxidative degradation. The tap water cleared away 50% residue of 34 pesticides, but no pesticide with 90% residue cleared away. The tape water mainly cleared hydrophilic compounds.Through MWCNTs purification and m-PFC purification,86 pesticides of multi-residue analytical methods were established in wine.The fortified recovery of the three matrix were 67.3%-109.3%, RSD<7.1%, and LOQ ranged from 0.01-0.05 mg/kg, on the condition of 0.01,0.05,0.1mg/kg fortified concentration. The matrix effect negatively effects the pesticide residue defection, thus in our study the matrix matching standard sample was employed to reduce the matrix effect.The established pesticide multi-residue analytical methods in wine were applied in analysis of sample from market. We did not detect any excess of pesticide residue. The dietary risk assessment of the pesticide residue from wine was carried out, and the long-term and short-term risk all lower than 0.8%, which rules out the long-term and short-term risk of the pesticide residue.Based on the pesticide multiresidue analytical method in grapes and wine, the research furtherly studied pesticide distribution during wine fermentation process, cleaning effect of pesticides removed and the accumulation of wine market monitoring data, The research provided theoretical basis for grape cultivation, advised scientific way to remove pesticide in grape for consumers, provided datas for rational MRLs formulation in the wine.
