In this paper, the oil single microcapsule and solid core microcapsule of Gum Arabic(GA) and gelatin (G) have been studied. For oil single microcapsule, G and GA wereused as wall materials to microencapsulate soybean oil through complex coacervationmethod. The microscopic and state of microcapsule of oil single microcapsule wereused as evaluation to investigate the properties of the microcapsule which preparated atdifferent process conditions. For solid core microcapsule, G and GA were used as wallmaterials to microencapsulate menthol through complex coacervation method. Theencapsulation efficiency and the resistance to volatile of G-GA microcapsule were usedas evaluation to investigate the properties of the microcapsule which preparated atdifferent process conditions.The hardening effects of glutaraldehyde (GLU) and transglutaminase (TG) werecompared. By single factor experiment, I found out the main factors which effect thecross-linked. Through the orthogonal design experiment, the resistance to volatile wasused as evaluation to comparison the cross-linked effect of two kinds of cross-linkedagents. The result showed that compared with GLU and TG exhibited similar hardeningeffectiveness, and them can be used as cross-linked agents to cross-linking the G-GAmicrocapsule.The menthol retention amount of microcapsule stored after9days was used asevaluation standard, composite design-response surface methodology and single factorexperiments were used to optimize the process condition: the initial concentration ofgum Arabic was10%, the wall core ratio was3.30, the stirring rate was443rpm, the pHof complex coacervation was3.8-4.1, the temperature of complex coacervation was33±2℃, the dilution ratio was0.3, slow cooling to10±3℃, the amount of GLU was0.75mL/g G, the cross-linked pH was8, the temperature of cross-linked was33±2℃,the crossing time was45min and modified by15%SiO2.. The experimental results showed that the resistance to volatile of microcapsule was very well. The encapsulationefficiency was90.49%.
