As a new technique, microencapsulation technology has been extensively applied in various fields. Gelatin is one of the main materials used in encapsulation. The properties of gelatin affect microencapsulation process greatly. The application was emphasized, but the coacervate process with various gelatins was not systematically researched, so the conclusion from different papers can not be compared with each other, and is not helpful on selecting gelatin for microencapsulation.The simple coacervation of gelatin in the microencapsulation process was investigated in this paper. The influence of different technological conditions including the concentration of gelatin, the ratio of gelatin to the solution of Vitamin E, the time of gelation, as well as the hardening time on the yields of microcapsules, the efficiency of encapsulation, was studied respectively. The Microencapsulation conditions were also optimized. It was found that the gelation speed of the gelatin has a great effect on its microencapsulation process, each gelatin has its own most fitting gelation time for getting high yield of the microcapsules and good encapsulation efficiency. The gelatin with complete cooling time between 50~80 seconds has a high yields and encapsulation efficiency, and the process may be controlled, the microcapsule is stable, its diameter is nearly Gaussian distribution. The release profile of microcapsule is not affected by gelatin kinds, but it is affected by degree of crosslink.Vitamin E was encapsulation with gelatin-acacia system firstly. It was found that the gelatin with high iso-electric-point (IEP) and high molecular weight is helpful to the complex coacervation. High efficiency of encapsulation and yields of microcapsules was obtained by RT-52706, an acid processed gelatin with high IEP and RT-53808, an alkali processed gelatin with high molecular weight.
