Chapter 3 of Walnut Oil Processing Technology is selected as the practice text in this translation practice.The main content of this text is about walnut leaching oil production technology,which is divided into three sections: oil and fat leaching technology,supercritical CO2 leaching walnut oil process and subcritical leaching technology.Given that the source text is a food-related text,it has distinctive features in terms of vocabulary and syntax,such as the use of a large number of specialized terms,the prominent phenomenon of nominalization,and the use of more complex sentences,the author believes that Catford’s translation shifts,with practicality and operability,provides a theoretical basis and guidance for practical application.This paper analyzes the application of Catford’s translation shifts theory in Chinese-English translation practice in detail from two aspects,namely,level shifts and category shifts,by selecting real cases of translation and taking the differences between English and Chinese as the basis.In terms of level shifts,the paper mainly discusses tense shifts and singular and plural shifts;in terms of category shifts,the paper discusses three types of category shifts respectively:(1)Structure shifts mainly include active and passive shifts,postpositional and prepositional shifts.(2)Class shifts are mainly the lexical shifts of nouns,verbs,prepositions,adjectives and adverbs.(3)Unit shifts mainly involve the shifts of phrases,clauses and sentences.This study takes Catford’s translation shifts theory as a guide and explores its specific application in the translation practice of food texts,specifically analyzing the translation methods from Chinese to English of specialized vocabulary and long and difficult sentences,while supplementing the relevant terms.This study will promote the construction of a food science corpus in our university,while highlighting the school-based characteristics of “great food,great nutrition and great health”.
