Ju Jia Bi Yong Shi Lei Quan Ji(居家必用事类全集)is a comprehensive daily use book in the Yuan Dynasty,Chapter Ji(己)and Chapter Geng(庚)are recipes,which contain a large number of oral food vocabulary.A comprehensive study on this will not only help to investigate the development and evolution of Chinese vocabulary,but also be beneficial to arrangement and collation of literature,the compilation of dictionaries and the study of the history of diet.This paper is based on the Ju Jia Bi Yong(居家必用)in the Ming Dynasty Silijian(司礼监)edition,refer to Shi Lin Guang Ji(事林广记)in the Yuan Dynasty Xiyuanjingshe(西园精舍)edition and the Zhejiang University collated version.on this basis,the most characteristic diet words in Ju Jia Bi Yong were studied.The main body of the thesis is divided into four chapters:The first chapter is the research on the food ingredients vocabulary of Ju Jia Bi Yong.This chapter mainly analyzes the extensive use of mutton ingredients and the rich connotation of seasoning ingredients,examines and interprets the“Qian\Qian\Mianqian\Fenqian”(牵、撁、面牵、粉牵)“Miansi\Fensi”(面丝、粉丝)“Za”(杂)“Songtang”(松糖)“Gouqiying”(枸杞英)“Bo\Bo”(饽、).The second chapter is the research on the utensil vocabulary of Ju Jia Bi Yong.This chapter mainly analyzes the utensil vocabulary reflects the material category and the diversification of pasta production,examines and interprets the“Aobang”(拗棒)“Chuibi”(炊荜)“Daluo”(搭罗)“Tuo\Yin\Yintuo\Tuozi\Tuozi”(脱、印、印脱、脱子、托子).The third chapter is the research on the technique vocabulary of Ju Jia Bi Yong.This chapter mainly analyzes the rich variety of cutting and cooking words,examines and interprets the “Lan”(爁)“Niang”(酿).The fourth chapter elucidates the value of the study of Ju Jia Bi Yong diet vocabulary.On the basis of vocabulary research,this chapter makes a supplement to the deficiencies and omissions of Zhejiang University collated version,takes“Shijian”(事件)“Fan\Fanqi\Feifan”(泛、泛起、肥泛)and“Xuan\Xuanfan”(暄、暄泛)as examples to analyze its lexicography value,takes“Gulachi”(古剌赤)and“Xiehuangdouzi”(蟹黄兜子)as examples to reveals the value of the book to the study of the history of diet.
