At present,it is difficult for specialized potato processing varieties in China to meet the needs of the industry,so it is of great significance to select specialized varieties with excellent processing characteristics.The dry matter,starch,and amylose of potato tubers are important indicators of concern in potato processing.For the processing and utilization of potato starch,the physicochemical properties of starch are also particularly important.In order to clarify the yield,processing quality,and starch physicochemical properties of potato varieties selected and cultivated in Northeast China in recent years that can be used for starch processing,13 varieties were used as materials to study the differences in agronomic traits,yield traits,processing quality traits,and starch physicochemical properties among different varieties.A comprehensive evaluation was conducted on the varieties,and the differences in processing quality traits among different varieties were analyzed to understand their starch physicochemical properties,Clarify the utilization direction of starch processing,provide basic data and selection reference for the industrial application of potato varieties.The main research findings are as follows:(1)Among the tested varieties,Vilas,Yanshu 5,and Kexin 17 have higher plant heights above 64cm;Yanshu 5,Dongnong 314,and Atlantic have thicker stems,exceeding 12mm;The total yield of Dongnong 312 and Dongnong 321 is relatively high,above 4000kg/667m~2;Dongnong 321,Dongnong 317,Dongnong 312,and Kexin 27 have higher starch yields,reaching over 600kg/667m~2.(2)The dry matter content of the tested varieties exceeded 19%,with Yanshu 5,Kexin 27,and Dongnong 310 having a dry matter content exceeding 26%;The starch content of Yanshu 5and Dongnong 310 exceeds 20%.(3)According to the ranking of starch physical and chemical properties of 13 varieties by principal component analysis,the varieties with high comprehensive scores are Atlantic,Dongnong 310 and Kexin 17.With high starch content,low gelatinization temperature,high gel hardness and low water separation rate,they are good varieties for starch processing.(4)13 potato varieties were classified through cluster analysis,and the tested varieties were divided into 3 categories at a Euclidean distance of 7.1.Cluster I:Dongnong 321,Dongnong 317,Kexin 27,Villas and Yanshu 5,with medium to high starch content,low amylose content,high viscosity,high starch gel hardness,low water separation rate,good freeze-thaw stability and high transparency;Cluster II:Dongnong 310,Dongnong 326,Dongnong 322,Kexin 30,Kexin 17,and Atlantic,with high starch content,good processing quality,high amylose content,low gelatinization temperature,high water precipitation rate,and low freeze-thaw stability;Cluster III:Dongnong 312 and Dongnong 314 have low starch content,low viscosity,high retrogradation value,and strong chewiness.
