Fresh corn is a type of corn which is harvested at milk ripening stage and edible fresh ear,mainly including sweet corn and waxy corn,which is a nutrition-efficient economic crop with priority development in China.Anthocyanins are the most widely distributed secondary metabolites of flavonoids in plants,which have strong scavenging ability of oxygen free radicals and antioxidant ability.Vitamin B2,a water-soluble vitamin,is an important compound in animal and plant metabolism,and also an important substance to maintain the health of human nervous system and muscles.This study with fresh sweet,waxy maize as the research object,the fresh corn grain and the content of anthocyanin and vitamin B2in composition and accumulation dynamic appraisal,has been clear about the color of fresh corn anthocyanin and its main components and the relationship between the antioxidant capacity,reveals the fresh corn germplasm grain content of vitamin B2and its accumulation dynamic change rule,Excellent germplasm materials rich in anthocyanins and vitamin B2were screened,which provided necessary material basis and theoretical basis for analyzing the physiological basis of anthocyanins and vitamin B2in fresh maize grains and breeding.The main results are as follows:1.Analysis and accumulation dynamics of anthocyanin components in fresh corn grainsIn 63 with nine different color type of maize germplasm in total phenol,total flavonoids and total anthocyanin content and anthocyanin composition has carried on the appraisal and quantitative analysis,found that different color type significant differences between corn grain total anthocyanin content,shows that corn grain color changes related to total anthocyanin content.Through to the different color type grain six main anthocyanin composition analysis,found the cornflower,geranium and petunias element is the main anthocyanin components affecting the fresh corn grain color,the knapweed element is the main composition of anthocyanins make corn grain black,at the same time identify five copies are rich in cornflower element selection,two contain geranium element fresh corn material,It provides a basis for further development of colored maize breeding.Through different color type antioxidant effect of fresh corn research,found that the content of total anthocyanins,flavonoids and total phenol and cornflower and geranium element content were were very significant positive correlation with the total antioxidant capacity,L*and b*values were very significant negative correlation with the total antioxidant capacity,showed that the corn grain the deeper the color the stronger the oxidation resistance.Through the study on the accumulation dynamics of anthocyanin content in different growth stages,it was found that the anthocyanin content increased with the increase of time,and the anthocyanin composition in fresh corn grains in different growth stages was also different,which was helpful to further study the synthesis mechanism of anthocyanin.2.Dynamic analysis of vitamin B2content change and accumulation in fresh maize germplasmThe content of vitamin B2(riboflavin)in the grains of 47 waxy maize and sweet maize inbred lines was determined by ULTRA performance liquid chromatography-mass spectrometry.The results showed that the content of vitamin B2in waxy maize and waxy maize was significantly different,and the content of riboflavin in waxy maize inbred line was significantly lower than that in sweet maize.Vitamin B2content was significantly different among maize inbred lines with different grain color,and vitamin B2content in yellow maize was significantly higher than that in white and purple maize.Correlation analysis showed that niacinamide content was significantly positively correlated with thiamine,riboflavin and pyridoxine contents in sweet corn and waxy corn,respectively,and riboflavin content was significantly positively correlated with pyridoxine content.This study provided some reference for improving the quality of vitamin B2in sweet and waxy corn seeds.
