| In this study,HPLC and GC-MS were used to detect the compositions of monomer phenols and aroma substances in 31 superior fruits of ’Beimei’ wine grape,so as to study the differences in the accumulation of phenolic substances and aroma substances in fruits of different superior wine grapes under the environmental conditions at the eastern foot of Helan Mountain.The results show that:(1)The results of fruit quality comparison showed that anthocyanins had the highest coefficient of variation and total soluble sugars had the lowest.Superior strains BMI,BM2,BM6,BM10,BM16,BM17,BM19,BM20,BM23,BM24,BM25,BM27,BM28,BM29 were distributed in the third and fourth quadrants,indicating that the titrable acid components of these 14 superior strains were significantly different from those of CK.(2)The comparison results of phenolic substances showed that:The comprehensive evaluation and analysis on the quality indexes of phenolic substances in fruits of different superior strains found that,in the comparison of phenolic substances with CK,BM1,BM11,BM12,BM14,BM15,BM17,BM19,BM21,BM22,BM23,BM24,BM25,BM26,BM27,and BM30 are distributed in the third and fourth quadrants and are farthest away from CK.The contents of phenolic compounds(vanillic acid,salicylic acid,ferulic acid,gallic acid and protocatechol)in the fruits of these 15 eutectic plants were significantly higher than those of 1the control.(3)The comparison results of aroma substances showed that the main types of aroma during fruit harvesting period were alcohols,acids,esters,ethers,aldehydes and ketones,and the contents of aroma substances were different among different fruit strains.There are 68 kinds of aroma substances in the fruits of ’BM19’ superior plant,71 kinds of aroma substances in the fruits of’BM23’ superior plant 53 kinds of aroma substances in the fruits of ’BM27’superior plant,and 59 kinds of aroma substances in the fruits of ’CK’ superior plants among which ’BM23’ superior plant has the most kinds of aroma substances.(4)In summary,the comprehensive fruit quality of’BM19’,’BM23’ and ’BM27’ was higher than that of other cultivars and control.Among them,the fruit quality(titrable acids,tannins and anthocyanins),phenolic substances(vanillic acid,salicylic acid,ferulic acid,gallic acid,protocatechol)and aroma substances(phenolic ketones,acids)of the three superior plants were higher than those of the control and other superior plants. |
