Vermicelli is a traditional food in China,with smooth and tender taste,can absorb a variety of compound flavors,has rich taste and high nutritional value,and is deeply loved by consumers.At the present stage,the food processing industry is developing towards automation.To solve the problems of poor labor environment,high labor intensity,high energy consumption and low level of automation in the production process of instant vermicelli production enterprises,with the aim of automating the vermicelli drying process of an instant vermicelli production enterprise,this paper studies its drying automation process and monitoring system,optimizes the design of the automatic drying line for vermicelli.The main contents of this paper are as follows:First,the drying characteristics and drying model of sweet potato instant vermicelli were studied.The nature of the moisture contained inside the vermicelli was analyzed,and the moisture contained therein was easily removed by drying.The vermicelli drying experiment was carried out to explore the influence of factors such as vermicelli drying temperature and whether the air was blown on the drying speed and drying effect of vermicelli.Through experiments,it can be seen that the efficiency of convection drying is much higher than that of pure heat transfer drying.The vermicelli drying data collected from the experiments were fitted with the drying mathematical model,and the results showed that the Page model can realize the prediction of the vermicelli drying process,and provide guidance for the vermicelli drying conditions,parameter selection and vermicelli drying automation scheme.Secondly,to increase the influence of convection drying on the vermicelli drying process,the optimization and simulation of the structure of vermicelli drying room is carried out.For the problem of low utilization efficiency of hot air flow on vermicelli drying,this paper proposed to add diversion ducts in the vermicelli drying room to strengthen the influence of convection effect on vermicelli drying,aiming to improve the vermicelli drying efficiency.The results of numerical simulation by CFD software show that the distribution of flow field in the vermicelli drying room with the addition of the diversion duct is better than that before optimization.At the same time,the cross-sectional shape and dimensional parameters of the diversion duct were further optimized to improve the average velocity of the airflow at multiple outlets of the diversion duct,reduce the wind speed inhomogeneity coefficient,and improve the drying efficiency of the vermicelli drying room.Thirdly,combined with the optimized design plan of the vermicelli drying room,the vermicelli drying automation process plan is proposed.To realize the processes of cutting and separating,conveying and feeding,and drying in the box in the vermicelli drying production process through the vermicelli drying automatic line,the Solidworks software is used to carry out 3D modeling of the cutting powder conveyor,screw loading machine and chain plate dryer,and design and select models for key structures and components,develop sensor setting plan,realizing various process steps of vermicelli drying through mechanical structure.Finally,complete the design of the monitoring system of the vermicelli drying automatic line.According to the functional requirements of the monitoring system to select the hardware type and write the software.The monitoring system can realize the power source driving,temperature adjustment and drying environment information display of the automatic line.The touch screen and PLC are used to cooperate to realize the human-machine interaction function of the vermicelli drying automatic line.This research provides a new automatic process scheme and its supporting monitoring system for the enterprise’s vermicelli drying production,which improves the drying efficiency and automation degree and provides a reference for production practice.
