| Mutton is rich in nutrients,but in the storage and marketing process is susceptible to adverse environmental influences,spoiled and deterioration.The preservation and freshness testing of mutton plays an important role in its distribution and is a strong support for the increase of mutton sales.Therefore,bifunctional nanofiber film that can extend the shelf life of mutton and perform real-time detection of its freshness was prepared.The bifunctional nanofiber film with Lead(Ⅱ)acetate basic as freshness indicator and carvacrol as bacterial inhibitor was prepared by electrostatic spinning technique with degradable Poly-L-Lactic acid(PLLA)as the substrate.The film was characterized by scanning electron microscopy,Fourier transform infrared spectroscopy,and water contact angle.The film has a uniform and smooth fiber structure,which is conducive to contact with H2S gas to improve detection sensitivity and slow release of carvacrol to improve freshness.The lead(Ⅱ)acetate basic and carvacrol were successfully loaded into PLLA to successfully prepare bifunctional nanofiber film.The color indicator layer was hydrophobic,and the color change was not affected by moisture;the antibacterial preservation layer was hydrophilic.The shelf-life extension ability of the antibacterial preservation layer was assessed by antibacterial and release behavior.The antibacterial preservation layer has a significant antibacterial effect on both E.coli and S.aureus.There was a slow-release behavior of carvacrol in the antibacterial preservation layer with and without food contact,laying a solid foundation for practical application.Bifunctional nanofiber film was applied to mutton storage at 4°C and 25°C to determine sensory evaluation,p H,TVB-N,TVC,TBARS and?E of bifunctional nanofiber film.The bifunctional nanofiber film prolonged the shelf life of mutton for 3 d during storage at 4°C and 12 h at 25°C.The color and?E of the bifunctional nanofiber film changed significantly.The mutton changed from fresh to spoiled,and the film color changed from white to dark brown.The bifunctional nanofiber film not only has good performance,but also successfully achieved the detection of mutton shelf-life extension and freshness.The bifunctional nanofiber film provides a new solution for intelligent packaging and will also provide new packaging ideas for mutton marketing. |
