| With the development of social economy and the enhancement of people’s health awareness,selenium food is taken as the main source of dietary selenium supplementation.In this paper,the heavy metals plumbum(Pb),cadmium(Cd),mercury(Hg)and arsenic(As)in six types of selenium foods,including cereals,potatoes,beans,meat,eggs and tea,were studied in Enshi area,and the levels of selenium(Se)and Pb,Cd,Hg and As in the six types of selenium foods were detected by inductively coupled plasma mass spectrometry(ICP-MS),and the contamination evaluation of the four heavy metals was performed by the Nemero integrated contamination index method The health risk assessment of heavy metals in six types of selenium foods consumed by residents in Enshi area was conducted by using the Target Hazard Quotient(THQ)method in the risk assessment of non-carcinogenic pollutants,and the content characteristics of Se and Pb,Cd,Hg and As in six types of selenium foods were analyzed by correlation analysis,factor analysis and cluster analysis.This study is the first to classify the heavy metal content characteristics of commercially available selenium foods in Enshi area,which can provide a theoretical basis for the establishment of subsequent selenium food-related standards and has reference significance for guiding residents in Enshi area to make reasonable use of dietary selenium supplementation and reduce the intake of toxic heavy metal elements.The main findings were as follows:1.Pb,Cd,Hg and As were detected in the six types of selenium foods to varying degrees,but there was no exceedance.Pb was detected in all six types of selenium foods,and the detection rate was tea > eggs > cereals,beans > meat > potatoes;Cd was detected in five types of selenium foods,including cereals,potatoes,beans,meat and tea,and the detection rate was tea,beans > cereals > potatoes > meat;Hg was detected in meat and Hg was detected in meat and tea selenium food,and the detection rate was tea > meat;As was detected in six types of selenium food,and the detection rate was tea > meat > cereals > beans > eggs >potatoes.The detection rate of four heavy metal elements in tea is the highest,but the average level of heavy metal content is generally low,all in line with the relevant standards.2.The combined contamination indices of Pb,Cd,Hg and As of the six types of selenium foods were in the order of beans > cereals > tea > eggs > potatoes > meat.the results of both single factor contamination index and combined contamination index of the four heavy metals were less than 0.7,which were also within the safe and clean level,indicating that the overall safety of heavy metal contamination of commercially available selenium foods in Enshi area in this study.3.The THQ value of single heavy metal target hazard factor and TTHQ value of total heavy metal target hazard factor of six types of selenium foods were less than 1.The TTHQ values were cereals > tea > beans > meat > eggs > potatoes in order,no matter from single heavy metal risk or multiple heavy metal compound risk,the dietary intake of the six types of selenium foods collected in this study was safe overall,and there was no dietary intake risk or low risk.4.There is no significant correlation between Se content and Pb,Cd,Hg and As content in six types of selenium foods,cereal,potato,bean and egg selenium foods;there is negative correlation between Se content and Pb,Cd,Hg and As content in meat selenium foods,and there is significant negative correlation between Se and Cd,probably because Se has antagonistic effect on these four heavy metals in livestock and poultry animals,which reduces the content of Pb,Cd,Hg and As in meat foods;there is significant positive correlation between Se and Cd in tea selenium foods,probably because there is synergistic effect between Se and Cd in the soil-tea tree system. |
