| Maize starch is an important renewable polymer compound with important applications in agriculture,food,textile,chemical industry,and other fields.High amylose maize starch is a special type of starch,that the amylose content is more than 50%.It has many advantages of resistance to digestion,good mechanical properties,and high degree of substitution in esterification reactions.Esterified starch produced by the reaction of octenylsuccinic anhydride(OSA)with starch has excellent emulsification performance and high safety,and is widely used in food,chemical industry,and medicine.However,the reaction of high amylose maize starch with OSA groups has not been fully studied,the emulsifying properties of OSA modified high amylose starch have not been fully evaluated.This not only hinders the application of high amylose corn starch,but also causes certain difficulties in the breeding direction of high amylose maize.This experiment will determine the optimal process for synthesizing OSA modified high amylose maize starch through orthogonal experiments.The degree of substitution was set as an indicator,and the amylose content,starch concentration,reaction temperature,p H value,and reaction time as factors.The emulsification performance of the product synthesized by the optimal process has been evaluated.On this basis,this study further processed OSA modified high amylose maize starch by using hydrothermal treatment to greatly improve its emulsifying ability and provide guidance for the application of high amylose maize starch.1.The optimal process for synthesizing OSA modified high amylose maize starch is showed: amylose content 58%,starch concentration 35%,reaction temperature 35 °C,reaction p H 8.0,and reaction time 5h.The order of influence of the selected five factors on the degree of substitution is amylose content>temperature>p H>starch concentration>time.The degree of substitution of synthetic OSA modified high amylose maize starch was 2.1%,which was greater than that of all methods in the orthogonal table.2.OSA modified high amylose maize starch has a high degree of substitution.Laser confocal microscopy,X-ray diffraction,Fourier transform infrared spectroscopy,and other means of the analysis indicate that OSA groups are mainly distributed within the high amylose maize starch particles,making OSA modified high amylose maize starch have better emulsification stability compared to ordinary starch.3.OSA high amylose maize starch can keep the particle structure in boiling water,but increase the specific surface area,which is conducive to the binding of starch particles at the oil-water interface,thereby increasing the emulsifying ability of starch.OSA high amylose maize starch subjected to hydrothermal treatment for 30 minutes has the highest emulsification capacity.4.Hydrothermal treatment of high amylose maize starch can produce rough granular starch and dissolved amorphous starch in the system.The mechanism of improving the emulsifying ability of starch after hydrothermal treatment is that rough granular starch strengthens the ability to aggregation to the oil-water interface,and dissolved amorphous particles increase the coverage of emulsion particles.This provides guidance for further improving the emulsifying ability of starch... |
