Meat acid discharge refers to strict implementation of quarantine system,cooling acid discharge of slaughtered carcasses in the acid discharge workshop for about 24 hours,so that the carcass temperature is reduced to 0-4℃.This kind of meat is called cold fresh meat and acid discharged meat,which is in line with the concept of modern nutrition.The meat is more mature,fresh,nutritious,safe,and easier for human body to digest and absorb.At present,small and medium-sized meat processing enterprises in China usually adopts manual pushing of carcass to into the acid discharge workshop to discharge acid,which is backward in production mode.Moreover,due to the harsh environment of acid discharge workshop and the increasing labor cost,there has been a problem of "labor shortage".At the same time,due to domestic meat processing equipment manufacturing enterprises lack the ability,talent and experience to develop excellent performance acid discharge workshop control system,large meat processing enterprises have to purchase foreign equipment and industrial software to improve the efficiency of the acid discharge workshop production link,so subject to foreign countries,high prices and maintenance costs,and face the problem of "stuck neck".Therefore,this paper carries out the research on the all-digital control system of acid discharge workshop for meat processing.It has important reference and guiding significance to solve the labor problem of meat processing enterprises,break the dilemma that the automatic production line control system of acid discharge is monopolized by foreign countries,and promote the transformation and upgrading of domestic meat processing and equipment manufacturing industry.The specific research contents are as follows:(1)Based on the full investigation of the operation principle of the acid discharge workshop of meat processing enterprises,the overall framework of the all-digital acid discharge workshop management and control system is proposed.Based on the control mode of Mitsubishi R series PLC and the upper industrial computer,the electromechanical system structure of the acid discharge automatic production line is designed,and the design,selection and installation integration of the system are completed.And gives the control software overall implementation scheme.(2)Based on the analysis and comparison of the principle of the current mainstream radio frequency identification technology,the selection of RFID reader and electronic tag for the classification and automatic identification of the carcasses in the production line of the acid discharge workshop is completed.On performance parameters of the uhf electronic tag reading and writing and metal environment electromagnetic wave propagation theory is analyzed,and through the experiment on reading distance,power,tags embedded in the metal hook depth and encapsulation way affect the performance of reading test verification,so as to ensure the reliable identification and classification of animal carcass and the success rate of metal hooks identification on automatic pipeline.Finally,the abnormal situation of RFID reader identification on the automatic pipeline is analyzed,and the solution is given.(3)Based on CC-Link fieldbus,address allocation is made for monitoring signals such as distributed sensor and electric control actuator,and PLC control program is developed to realize scheduling and monitoring of acid discharge workshop;The monitoring signal access mode and information model based on OPC UA are designed,and the OPC UA server is created by KEPServer EX6,which can be displayed,processed and monitored by the human-computer interactive interface of the control system of the fully digital acid discharge workshop.(4)By comprehensive use of.NET Framework,SQL SERVER database,PLC controller,OPC UA and other technical tools,the development of various functional modules of the fully digital acid discharge workshop management and control system has been completed,and the efficient and reliable management and control of product classification,automatic identification,and pipeline operation in and out of storage has been realized.The experimental platform of acid discharge workshop is built in the industry-university-research cooperation enterprise,and the unmanned automatic operation of control operation is realized,which verifies the feasibility and reliability of the system,and lays an important foundation for the realization of the whole process control and digital transformation and upgrading of meat processing industry.
