| China is the origin of tea tree and the country that first discovered tea and drinking tea in the world.In recent years,under the background that the state continues to increase its support for agricultural industry,Chinese tea has developed rapidly.Black tea is one of the most important teas in our country and its quality is closely related to the fermentation process.At present,due to the obvious backward trend in black tea processing technology,tea making experience and facilities,poor compatibility of equipment and process,limited development of semi-automatic equipment and less production capacity,black tea processing equipment cannot realize precision and intelligent operation,restricting the development of black tea industry.Therefore,it is of great significance to strengthen the research and development of black tea production technology,explore new fermentation devices,improve the production efficiency and quality of black tea,and promote the sustainable development of black tea industry.Aiming at the shortcomings of traditional fermentation and existing fermentation equipment,this paper develops an efficient fermentation device for black tea.The main research contents and conclusions are as follows:(1)Design and develop black tea fermentation equipment based on black tea fermentation mechanism and heat balance theory,so as to meet market demand and realize efficient energy supply and high precision control of temperature and humidity in black tea fermentation process.(2)Numerical simulation modeling was carried out on the fermentation chamber based on computational fluid dynamics(CFD)method.It was obtained that when the inlet temperature of the fermentation chamber was 70℃ and the inlet velocity was2m/s,the distribution of air flow and temperature in the fermentation chamber was relatively uniform.(3)The optimization scheme of temperature and humidity control strategy is proposed.When the temperature is close to the target temperature,the fan stops heating and the steam keeps high temperature for a period of time to supply humidity.When the temperature is less than the target temperature,increase the upper and lower limits of humidity,and control the range at about 5%.At this time,the fermentation room temperature is easier to reach the target temperature and tends to be stable. |
