| In view of the difficulty and fragmentation of fresh product preservation knowledge and equipment technology,the incompatible and unsystematic multi-intelligent systems,lacking cold chain logistics intelligent facilities and advanced storage facilities,poor intelligent control of the phase temperature storage,those problems were unable to meet the needs of the preservation of massive fresh fruit and vegetable.In this study,the object-oriented research method,through literature review,requirement definition,design,implementation and verification,to study the intelligent management and control preservation technology of phase temperature storage.The main research results were as follows:1.Construction of a large network tower database of fruit and vegetable preservation parameters:collected 218 kinds of popular fruit and vegetable optimal preservation parameters,including temperature,humidity,gas,freezing point,chilling damage threshold,gas damage threshold and so on.After carding and analysis,it was discovered that most fruit and vegetables suitable for storage temperature were principally distributed in the four temperature zones of 0℃,4℃,8℃,and 14℃.Between the four major nodes temperature,the preservation temperature of fruits and vegetables followed the iterative law of temperature order.A fruit and vegetable network tower system software was developed based on the QT development environment,Model/View design mode and SQLite database.The parameter retrieval and matching were effective and the operation was reliable.It could realize the classification and preservation of fruit and vegetable preservation parameters,which was convenient for users to retrieve and manage.2.Establishment and operation of the intelligent control system for fresh-keeping core of phase temperature storage(PTS):an intelligent preservation control system of fruit and vegetables was designed based on the large network tower database preservation parameters.After the development and construction of the system,the information collection nodes of the system worked normally,the data uploading of the storage environment parameters was stable and accurate,and the average response time of the remote control node equipment was 1.15 s.The external storage environment was always under the optimum fresh-keeping parameters to better ensure the preservation of fruits and vegetables.3.Evaluation of the application effects of the PTS precise controlled temperature preservation technology:based on the partial least squares method,a model suitable for the TSS and the prediction of watercored apple was proposed.The values of RMSEC,Rp,and RPD in the TSS model were 0.41,0.93,and 2.81,respectively.The Rp,RMSEC,and RPD values in the water core discrimination detection model was 0.94,6.24,and 2.92,respectively.It showed that the model had a good predictive ability and could realize the rapid prediction of the watercored apples.Meanwhile,this technology could precisely control the temperature.More importantly,the temperature fluctuation was less than±0.1℃,which well maintained the optimum storage temperature requirements for watercored apples.The preservation effects of this technology were significantly better than those of ordinary cold storage.On the 140thday of storage,the weight loss rate of samples in the phase temperature storage(PTS)was only 2.23%.The soluble solid content was11.64%,which was 1.11 folds that of the ordinary cold storage.Moreover,PTS combined with GA3treatment significantly maintained a high water core rate(14.38%),which was beneficial to retain visual quality attributes,delay the decline of nutritional quality,and improve SOX and SDH activities,keep a high level of soluble sugar,better hold fruit flavor,enhance antioxidant enzyme activity and the abilities to resist stress,and delay the process of senescence of fruit.4.Evaluation of the application effects of the PTS intelligent controlled atmosphere preservation technology:this technology can dynamically adjust the O2and CO2concentrations in the phase temperature storage and always maintain them within the preset range and the gas amplitude range below 5%.Compared with the control group(SO2+air),the phase temperature storage intelligent controlled atmosphere group(SO2+14%~17%CO2)could effectively retain the overall appearance and color properties,slow down the loss of nutrients,and delay the decrease of POD and CAT activities,inhibit the increase of PPO activity,improve the stress and defense capabilities of plant,prevent cell membrane structure from being damaged,inhibit the process of deterioration,reduce the rate of fruit rot,and extend the market life up to 60 days. |
