Abstract/Summary:
Acrylamide in food mainly comes from the "Maillard reaction" in the process of food processing.Existing relevant studies have shown the carcinogenicity and neurotoxicity of acrylamide.In this paper,a series of studies and analyses were carried out to obtain the population distribution characteristics and regional distribution characteristics of dietary exposure to acrylamide,in order to verify the carcinogenicity of acrylamide.The risk assessment model is implemented in the case of insufficient prior information or small samples.In this paper,the consumption characteristics of various kinds of food and basic statistical characteristics of dietary intake of acrylamide were obtained through descriptive statistics.Population distribution characteristics of dietary exposure to acrylamide were studied by risk assessment model,and use Bootstrap and Monte Carlo methods to measure uncertainty and variability.The corresponding conclusions were given based on reference intake.Spatial autocorrelation analysis and hierarchical cluster analysis were used to study the regional correlation and clustering characteristics of dietary exposure to acrylamide.The correlation coefficient between dietary intake of acrylamide and cancer incidence was calculated and significance test was conducted to determine the correlation between the two.It is found that the residents in each province consume the most cereals and vegetables,and the least sugar,preserves and infant food.The per capita daily consumption of cereals was the highest,while the per capita daily consumption of oils was the lowest.The intake of acrylamide at all ages in urban areas was higher than that in rural areas.The dietary exposure level of acrylamide in children was higher.The dietary exposure of acrylamide in rural population was higher than that in urban population in adolescent group,adult group and elderly group,and the dietary exposure of acrylamide in children group was greater than that in rural population.The dietary exposure level of acrylamide in women in children group,adult group and old group was higher than that in men,while that in adolescents was higher than that in women.Where the dietary exposure of acrylamide is high,the dietary exposure of acrylamide is also high in the surrounding areas.The dietary exposure of acrylamide in Liaoning province and Heilongjiang Province was homogeneous.The distribution of dietary exposure to acrylamide in Hubei Province,Shandong Province and Chongqing was the most similar.There is no significant correlation between dietary intake of acrylamide and the incidence of cancer.The carcinogenicity of acrylamide needs further verification.In this regard,some dietary suggestions are put forward for Chinese residents:adjust the dietary structure,reduce the intake of high temperature fried potato foods,increase the intake of milk and egg products;adjust cooking methods to minimize high temperature cooking,blanching or rinsing food;increase the treatment medium,for example:use egg white coating to reduce the acrylamide content of fried potatoes,use whole bean pulp and carrot pulp instead of water and noodles to reduce the acrylamide content of fried dough sticks.
