| Hydrogel is a kind of water-expanding crosslinked polymer which is formed by introducing a part of hydrophobic group into water-soluble polymer with crosslinked structure.It takes water as the dispersion medium,soft but can maintain certain shape.However,due to its poor mechanical properties,its application scope is limited.Therefore,upgrading the properties of hydrogels and maintaining their characteristics of simple preparation,low toxicity and good biocompatibility have gradually become research hotspots.Double network hydrogels consist of two asymmetric network structures of different properties,with higher stiffness and toughness.In this paper,We set the HEWL amyloid fibrils-EGCG hydrogel as the object of research,studying the effects of different concentrations of EGCG,Fe(Ⅲ)and genipin on the gel system.In order to improve the mechanical properties and functions of hydrogels,this paper intends to design a kind of food-grade high-strength hydrogels,which can not only increase the application scope of hydrogels but also ensure their biological safety.The effects of polyphenol content,Fe(III)/EGCG molar ratio and genipin concentration on the rheological properties and microstructure of hydrogels were investigated.1.Preparation and characterization of HEWL amyloid fibrils-EGCG-Fe(Ⅲ)hydrogelFe(III)is an ion formed after iron loses three electrons.It is the most stable ion of iron and has moderate oxidation ability.It can chelate with EGCGComplex hydrogels were prepared from HEWL protein fibril,EGCG and FeCl3.To learn about the characterization of hydrogels,we study the effects of different EGCG concentrations and Fe(III)/EGCG molar ratio on the appearance,rheological properties and microstructure.2.Preparation and characterization of HEWL amyloid fibrils-EGCG-Genipin hydrogelThe natural cross-linking agent genipin extracted from gardenia fruit has many active functional groups and can cross-link with HEWL amyloid fibril.Complex hydrogels were prepared from HEWL protein fibrils,EGCG and genipin.To learn about the characterization of hydrogels,we study the effects of different concentrations of EGCG and genipin on the appearance,rheological properties,microstructure and intermolecular interactions of the complex components.were studied.3.Preparation and characterization and application of HEWL amyloid fibrils-EGCG-Genipin hydrogelComplex hydrogels were prepared from HEWL protein fibrils,EGCG,FeCl3 and genipin.To learn about the characterization of hydrogels,we study the effects of different concentrations of genipin and the presence of iron ions on the appearance,rheological properties,microstructure. |
