| Immunity is the protective barrier of the human body and is essential for people’s health.When the immunity is low,the immune system cannot play a protective role normally,and the body is in a state of risk such as infection or allergic reactions,immune diseases,etc.,and it is very easy to suffer bacterial,viral,fungal and other infections.The body’s immunity is closely related to nutritional intake,and reasonable nutrient intake is a strong guarantee for maintaining good immunity.Nutrient deficiencies or inappropriate proportions can easily lead to malnutrition and reduced immunity.Despite with the rising living standards,hundreds of millions of people around the world are still suffering from malnutrition from a variety of specific diseases and need nutritional interventions.In order to provide nutritional support to special populations,foods for special medical purposes are born.Nutritional immunotherapy for special groups of immunocompromised people such as trauma,infection,and postoperative tumor patients are given nutritional immunotherapy through nutritional support.By giving patients adequate nutrition,patients have sufficient nutritional reserves in the body,so that they can avoid metabolic disorders.It is an effective way to reduce the risk of surgery,postoperative complications,decrease the risk of death,and help with rehabilitation.However,foods for special medical purposes started late in Chian,and its policy documents,product research and development,circulation links and other aspects lagged behind,and there is huge potential and space for development.Therefore,this paper is based on trauma,infection,postoperative tumor patients and other immunocompromised special groups,to develop a kind of whole nutrition food for special medical purposes that helps to improve immunity,in order to improve nutritional status,postoperative rehabilitation and quality of life.The key to the development of special medical food is the excavation and innovation of nutritional and efficacy value.Meanwhile,as the formula composition is different,it will change the nutrition and function characteristics of foods for special medical purposes.Therefore,this paper focuses on screening raw materials and formula design,scientifically planning the formula composition and proportion of the special medical food raw materials,designing energy and energy supply ratio of each nutrient.Then the dosage form and processing technology of the product are determined,and its efficacy is scientifically evaluated.The main findings of the study are as follows:(1)Based on the special nutritional needs of immunocompromised group,energy supply ratios of the three major nutrients are designed: protein 22%,fat 39%,and carbohydrate 35%,and add bioactive ingredient.On this basis,the raw materials were selected and the amount was planned with computer software,and finally the experimental verification was carried out,and the dosage of each raw material was determined: Medium chain triglycerides 32.88g/100 g,Soybean protein powder 25.20 g /100 g,Whey protein powder 20.16 g/100 g,Galactooligosaccharidess 5.88 g/100 g,Fructooligosaccharides 5.63g/100 g,Maltodextrin 10.25g/100 g.According to the results of antioxidant experiments and the Pharmacopoeia of the People’s Republic of China(2020 Edition),the dosage of Ginseng polysaccharide,Yam polysaccharide and Poria polysaccharide are 1 g/100 g,3g/100 g and 3 g/100 g,respectively,and the dosage of corn peptide and turtle peptide are3g/100 g and 2g/100 g,respectively.The types of stabilizers are xanthan gum,guar gum,and sodium alginate,which are designed by one-way experiments.The response surface optimization test shows that the addition amounts of xanthan gum,guar gum and sodium alginate are 1.6 g/100 g,1.0 g/100 g and 1.2 g/100 g,respectively.According to sensory experiments,the dosage of sucrose and steviol glycosides are determined to be 3 g/100 g and 20 mg/100 g,and the amount of flavored vanilla bean extract(extract)are 2.5 mg/100 g.After inspecting the nutrient content and energy supply ratio of the products,which are in line with the expected design goals.Then the draft of product quality standards is formulated as product quality control standards.(2)By acute toxicity experiment on mice,gastric filling the product according to the maximum gassering dose and observe for 14 d.The results showed that there is no poisoning phenomenon in the mice.The mice weight in each treatment group increased normally,suggests the product had no effect on the skin,hair,stress and activity state,secretions,etc.,and there is no abnormality in the organs after dissection,indicating that the tested subject is safe and non-toxic or had no toxic side effects.(3)Cyclophosphamide(CTX)was used to induce mice immunosuppression model,by recording mice body weight,it was found that this product can promote the growth and development of mice,slow down the immunosuppressive effect of CTX,and help the recovery of CTX immunosuppressed body weight of mice;CTX had caused different degrees of damage to mouse organs,and this product can repair the immunosuppressive damage caused by CTX to organs;the indicators CAT,SOD,GSH,NO,TNF-α,and IL-6model groups in mice serum were lower than other groups.The high-dose group of this product is close to the blank group level,indicating that this product has a good effect on the recovery of the relevant biochemical index levels in the serum of immunosuppressed mice.The results of pathological staining and sectioning of spleen in each group showed that this product can effectively protect the spleen of immune organs in immunosuppressed mice.(4)The stability experiment of the product includes accelerated and influencing factor experiment to determine the change of the nutrient content,appearance,physical and chemical index of the product.The accelerated experimental results showed that the appearance of the compound metal packaging material changed little within 4 months compared with plastic and glass packing,the color,tissue state,nutrients and physical and chemical properties did not change significantly,and the total number of colonies did not exceed the standard.Therefore,the packaging material of the product should be using composite metal packaging materials as much as possible.Influencing factor experiments have shown that under high temperature and high humidity conditions,nutrients such as protein and fat have undergone significant changes,and the tissue morphology and flavor of the product and the nutrient content have a greater impact,which directly affects the edible quality and nutritional value of the product.Light has a greater impact of the product om the color,vitamins,minerals,etc,but the physical and chemical properties do not change much.Under high temperature,humidity and light conditions,the total number of colonies is under the specified range,indicating that the storage conditions have little impact on the total number of colonies,and also reflecting the good sanitary conditions during the production of the formula powder and the fact that they are not contaminated by microorganisms.Therefore,the product should be stored in a cool and dry place,avoid contact with oxygen and direct sunlight.When selecting packaging materials,materials with good sealing,moisture resistance and opaque light should be selected. |
