Blended oil is a new type of edible oil that can make up for the excessive or insufficient nutrition of edible single oil and meet the proportion of human fatty acid demand.There is a large market gap,but there are few blended oils that meet the fatty acid balance.In order to meet the needs of consumers to eat nutritious and healthy oils,it is necessary to achieve fatty acid balance.In this study,11 kinds of common vegetable oils and separately extracted beef tallow are used as raw materials,the database of raw oil based on fatty acid is established,and the blending oil parameters are set up to meet the fatty acid balance and nutrient content.Taking the price as the index,the fatty acid balance blending oil is prepared by modeling and programming with matlab software,and the blending process is optimized,analyze the physicochemical properties,nutritional components and predict the shelf life of fatty acid balanced blended oil.The research contents and main conclusions are as follows:The cow oil is subjected to a solvent,obtaining a sputum,the acid price,peroxidation value,iodine value and the saponified value are higher than the indicator of the beef tallow,while the melting point is lowered to 21.74 ℃,and the cholesterol content is lower than the beef tallow,80.55 mg/100 g.By comparing the fatty acids of the two,the palmitic acid of the cow oil is reduced,resulting in a decrease in the total saturated fatty acid(SFA),reduced by 13.11%,and extracts increased oleic acid,linoleic acid and linolenic acid,therefore the monoquatic fatty acid(MUFA)and polyunsaturate fatty acids,pufa were raised,48.67%,5.34% respectively.The fatty acid composition and content of 11 kinds of common vegetable oils were analyzed by gas chromatography-mass spectrometry.The results show that all 11 kinds of vegetable oils contain palmitic acid,stearic acid,oleic acid and linoleic acid.The content of palmitic acid is mostly less than 15%,the content of stearic acid is less than 5%,the content of oleic acid in olive oil and tea oil is as high as 80%,the content of linoleic acid in sunflower seed oil and corn oil is high,the content of linolenic acid in flaxseed oil is as high as 60.72%,peanut oil Corn oil and sunflower seed oil contain a small amount of behenic acid,and the content of erucic acid in rapeseed oil is 8.23%.The content of MUFA in olive oil is as high as85.45%,and only rice oil contains 2.23% myristic acid.The proportion of fatty acids in vegetable oil is unbalanced,and a single oil does not have the best quality ω6:ω3 ratio,which does not conform to the ratio of MUFA and pufa1:1.Relatively speaking,rice oil is a vegetable oil close to the demand of human fatty acids.Taking separately extracted tallow as the base material,combined with 11 kinds of vegetable oils,the mathematical model is established by matlab software,and the blended oil formula of fatty acid balance is optimized based on the price advantage.The mass percentage of each raw oil is: Separately extracted tallow 8.00%,corn oil 16.40%,flaxseed oil 72.20%,sesame oil 3.40%,and the unit price is 0.28 yuan.The verification test shows that SFA accounts for 12.78%,ω-6/ ω-3 the value of PUFA is 5.9868,between 4 ~6:1,and the mass fraction ratio of MUFA to PUFA is 0.9561,close to 1:1,which is consistent with the expected value;The optimal blending conditions of fatty acid balanced blended oil are as follows: blending time 30 min,addition amount of tert butyl hydroquinone 15 mg and blending temperature 20 ℃.The acid value,peroxide value,iodine value,saponification value and moisture content of fatty acid balanced blended oil are 0.17 meq/kg,1.33 meq/kg,96.38 g/100 g,189.35 mg/g and 0.10%,which meet the national edible oil standard;the tocopherols and squalene of the fatty acid balance blended oil are mainly from corn oil.Among the four tocopherols,the content of γ-tocopherol is the highest,and the total tocopherol is 83.91 mg/100g;the content of squalene is 33.17 mg/100g;According to Schaal oven method and Arrhenius classical formula,the shelf life of fatty acid balanced blend oil is 18 months. |
