| Corbicula fluminea polypeptide(CFP)is a natural polypeptide extracted from Corbicula fluminea that can be used as a nutritional fortifier in beverages and other foods.However,CFP will inevitably interact with polyphenols during the eating or processing process,affecting its functional properties and utilization.As a result,in this paper,chlorogenic acid(CA),epigallocatechin-3-gallate(EGCG),and cyanidin-3-Oglucoside(C3G)were chosen as representative polyphenols to investigate the interaction and mechanism with CFP,and the antioxidant activity and digestive characteristics of the polyphenol-Corbicula fluminea polypeptide complex were investigated.The following are the main research findings and findings:1.Research on the Interaction of CA with Corbicula Fluminea Polypeptide and Its DigestibilityMulti-spectral technology was used to study the interaction and mechanism of CA and CFP,and in vitro antioxidant and gastrointestinal digestion simulation experiments were used to evaluate the complex’s antioxidant activity and digestive characteristics.It was discovered that the combination of CA and CFP altered the average particle size and Zeta potential,and that CA altered the microenvironment of aromatic amino acids in CFP.CA and CFP were combined primarily by hydrophobic force,with approximately one binding site.CA and CFP have a synergistic antioxidant capacity,CA can not only improve the antioxidant activity of CFP in the gastrointestinal digestion,but also inhibit CFP digestion,affecting the human body’s absorption of CFP.2.Research on the Interaction of EGCG with Corbicula Fluminea Polypeptide and Its DigestibilityMulti-spectral technology was used to study the interaction and mechanism of EGCG and CFP,and in vitro antioxidant and gastrointestinal digestion simulation experiments were used to evaluate the complex’s antioxidant activity and digestive characteristics.The results show that the interaction complex has greater stability than CFP.The addition of EGCG decreased CFP’s hydrophobicity,and the binding of EGCG and CFP was primarily by hydrophobic force,with a binding molar ratio of 1 1.EGCG can not only increase the antioxidant activity of CFP during gastrointestinal digestion,but it can also inhibit CFP digestion,affecting the human body’s absorption of CFP.3.Interaction and Antioxidant Activity of C3 G with Corbicula Fluminea PolypeptidesThe interaction and mechanism of C3 G and CFP were studied using multi-spectral techniques,and the complex’s antioxidant activity was measured in vitro using free radical scavenging activity and reducing power.The results show that the composite system has greater stability than CFP.The main type of interaction between the two is hydrophobic force,and CFP has a single class of C3 G binding sites.At the same time,the antioxidant activity of the C3G-CFP complex is greater than that of CFP,and their covalent bonding results in a synergistic antioxidant effect. |
