| Food traceability is an important technical means to ensure food safety and safeguard the legitimate rights and interests of consumers,and animals in different regions have their own mineral element fingerprint characteristics,which can be used for rapid and effective origin identification.Tan lamb meat is tender and delicious,deeply loved by consumers,at the same time,head,hooves,rod bones,internal organs and other by-products are also people’s favorite food,but the origin of the unknown origin,need to be identified for research.In the early stage,the research team studied the characteristics of mineral elements in Tan mutton,established a traceability fingerprint to distinguish between different origins of Tan mutton.And this study continues to use inductively coupled plasma-mass spectrometry(ICP-MS)instrument to determine the internal organs,bones and carcass of Tan sheep in the Yanchi County of Ningxia(Fengjigou Township,Gaoshawo Town,Mahuangshan Township),Otoke Qianqi of Inner Mongolia,Dingbian of Shaanxi Province and Huanxian County of Gansu Province.107Ag,137Ba,9Be,43Ca,44Ca,111Cd,63Cu,59Co,52Cr,133Cs,39K,56Fe,24Mg,55Mn,95Mo,23Na,60Ni,31P,85Rb,121Sb,78Se,118Sn,88Sr,125Te,51V and 66Zn mineral elements’ content were determined and multivariate statistical analysis was carried out.It provides method support for the research and development of traceability technology of the mineral elements of the origin of the Yanchi Tan lamb.The details are as follows:(1)The ICP-MS instrument was used to determine the content of the 25 mineral elements in the visceral tissue(heart,liver,lungs,kidneys)samples of Tan sheep of different origins,and combined with multivariate statistical analysis methods.The mineral element content in the samples of internal organs of Tan sheep was analyzed,and the characteristic elements of different internal organs and organs of Tan sheep in the Yanchi County of Ningxia were screened.The results showed that among the 25 mineral elements measured,11 mineral elements(137Ba,43Ca,63Cu,56Fe,39K,31P,60Ni,78Se,118Sn,125Te,66Zn)could be used as traceability indicators of heart tissue in Tan sheep,with a discrimination accuracy of more than 85%.And 10 elements(111Cd,59Co,52Cr,56Fe,39K,55Mn,95Mo,23Na,121Sb,78Se)can be used as a traceability index for Tan sheep liver tissue in Yanchi,with an accuracy rate of more than 88%.There are 9 mineral elements(111Cd,63Cu,39K,95Mo,23Na,121Sb,88Sr,85Rb,125Te)as traceability indicators for Tan sheep lung tissue in Yanchi,with an accuracy of 90%.There are 8 mineral elements(111Cd,63Cu,56Fe,39K,24Mg,23Na,78Se,125Te)can be used as a traceability index of kidney tissue in Tan sheep,and the accuracy of origin discrimination is more than 86%,which can distinguish between internal organs of different origin Tan sheep.(2)The ICP-MS instrument was used to determine the content of the 25 mineral elements in the bones(skull,spine,limb bones,ribs)of Tan sheep of different origins,and the traceability fingerprint of the mineral elements of Tan sheep bones was established by multivariate statistical methods.The results showed that 10 mineral elements(43Ca 111Cd,133Cs,24Mg,55Mn,23Na,31P,85Rb,125Te,66Zn)were closely related to the bones of Tan sheep in the Yanchi County of Ningxia and the overall correct discrimination rates of the regression test and cross-test were 87.50%and 86.87%.Respectively,and the established traceability fingerprint of mineral elements could distinguish the bones of Tan sheep of different origins.(3)The ICP-MS instrument was used to determine the content of the 25 mineral elements in the carcass of the Tan sheep of different origins,and the content of mineral elements in the carcass of different origins was analyzed according to the multivariate statistical method.The results showed that the geographical characteristics of the 25 mineral elements measured in the Tan sheep carcass were obviously distributed,and 11 mineral elements(137Ba,43Ca,63Cu,52Cr,56Fe,24Mg,55Mn,95Mo,78Se,88Sr,51V)were closely related to the meat samples in the carcass of Tan sheep,and 11 mineral elements(137Ba,52Cr,56Fe,39K,24Mg,55Mn,23Na 85Rb,31P,78Se,66Zn)were closely related to the meat samples in the carcass of Tan sheep.The combination of meat sample and skeletal characteristic elements constitutes the fingerprint of the combination of meat and bone of the sheep carcass,the Fisher step-by-step discriminant analysis and artificial neural network verification discrimination accuracy rate are above 88%,and the traceability fingerprint of the mineral element combination established is effective,which can identify the carcass sample of the Tan sheep of different origins. |
