| The thermal volatilization of aroma substances in the processing of instant tea is the main reason for the tea fragrance and quality degradation of instant tea and tea beverages.With the development of society,natural high-scented tea drinks are increasingly favored by consumers.This experiment uses oolong broken tea as raw material.The process conditions of aroma water leaching were studied,and the suitable macroporous resin was selected to separate and extract the aroma substance,and the best technological conditions for preparing tea fragrant were obtained.Finally,the tea fragrant was applied to the tea beverage to prepare the high fragrant tea beverage formula.The results are as follows:1.Aroma water leaching was obtained by single factor test and orthogonal test.The optimum conditions for aroma water leaching were as follows:The extraction temperature was 70℃,the extraction time was 35min,the tea to water ratio was 1:12,and the vacuum was 0.08 Mpa.2.The polar macroporous adsorption resin HPD400 was screened and the process conditions for extracting tea fragrant were as follows:adsorption sample ratio:1:100,adsorption flow rate was 1 BV/h,eluent was 95%ethanol,and elution flow rate was 0.5 BV/h.The 0.25~1.5 BV of the eluate was collected as tea fragrant.3.The tea fragrant is backfilled into the tea powder and applied in the tea beverage according to a certain ratio to prepare a pure tea beverage,a milk tea beverage and a juice tea beverage formula.The specific formula is as follows:Pure tea beverage formula:After blending 2%and 98%of tea fragrant extract and tea powder,Adding 0.25%tea powder to pure water can produce high-scented oolong tea Zhangping narcissus pure tea drink.Milk tea beverage formula:0.7%compounded black tea powder.The proportion of tea fragrant extract in tea powder is 6%,3.5%whole milk powder,7%white sugar and 80℃ pure water dissolved to make high-fragrance milk tea beverage.Juice tea beverage formula:0.18%Zhangpingnarcissusteapowder,The content of tea fragrant extract in tea powder is 4%,0.3%grapefruit concentrated juice,9%white sugar,0.15%citric acid,and dissolved in normal temperature pure water to obtain flower fruit juice tea beverage.The three beverage formulas produce tea beverages with natural,high-scented quality characteristics. |
