| In order to remove DON from wheat and improve the safety quality,processing quality and nutrition quality of products,scabbed wheats harvested in 2018 which the content of DON is 2335.28 μg/kg were chosen as materials to study the degradation of DON by peeling treatment,ozonized solution treatment,microwave treatment and the combination of the above methods.Besides,the processing quality of flour and the digestibility of peeling wheat after the combination treatment were analyzed.The main conclusions were as follows:(1)Under the experimental condition,the optimum conditions of tempering before peeling were as follows: the peeling flow was 30 kg/h,the tempering solution was 2.0%,the tempering time was 30 s and no early tempering.In this condition,the peeling wheat had less broken grain,the surface of the grain is dry,smooth,clean,and the color becomes lighter.(2)Peeling can effectively remove DON from scabbed wheat.The DON decreased with the peeling rate went up.When the peeling rate was 6.55%,the DON content under the national safety limit(1000 μg/kg).The wheat got the lowest DON which is 564.99 μg/kg when the peeling rate reached 9.92%,and the removel rate could reach up to 75.81%.When the peeling rate was 6.55%,the wheat got best processing quality.(3)Ozone solution soaking could significantly remove the DON in bran,the combination treatment of microwave and ozone solution could heighten the effect,but single microwave treatment hand no effect.During ozone solution soaking,the optimum conditions for the ozone solution concentration of 8.24 ppm,the ratio of solid to liquid of 1:4,the soaking time of 10 min,but the DON still higher than the national safety limit.When the bran treated with microwave power of 10.0 k W and microwave time of 1 min,the DON removal rate could reach up to 75.09% and under the national safety limit.(4)The combination treatment of microwave and ozone solution could significantly remove the DON in peeling wheat.When the ozone solution concentration was 8.24 ppm,tempering solution was 30 s,tempering time was 6 h,miceowave power was 10.0 k W,miceowave time was 1 min,the DON removal rate could reach up to 63.94%,and under the national safety limit.The digestibility of protein and starch all increased after treatment.Peeling and combination treatment of microwave and ozone solution had good result in removing DON from wheat.They had improved the safety of the products while saving costs. |
