Quinoa is a kind of plant with total grain nutrition.Its nutritional value is higher than that of most traditional crops.Quinoa products are still in the initial stage in China.The research on nutritional evaluation and functional activity of quinoa is not deep enough.In this paper,a compound granule formed by compounding 15 kinds of foods of quinoa,oats,buckwheat,poria cocos,yam,balsam pear,licorice,fructus swietenia macrophylla,hawthorn,chinese wolfberry,arctium lappa,grape seed,raspberry,xos,tricalcium phosphate was studied.The formula was optimized and the hypoglycemic effect of the compound granule was explored.Aim to provide a new direction and theoretical guidance for the development of quinoa products in the future.The results are as follows:In this paper,Plackett-Burmen test method was used to test these 15 factors.Sensory evaluation and in vitro glycemic index were selected to determine the final index by comprehensive scoring method.The results showed that raspberry powder,licorice powder and yam powder were the significant factors.The optimum formula was determined by orthogonal experiment: 100% quinoa powder,7.5% yam powder,2.6% licorice powder,2.3%raspberry powder,8.58% oat powder,1.72% buckwheat powder,0.1% balsam pear peptide,0.1% Tianguo extract,1.72% hawthorn powder,2.15% medlar powder,2.58% burdock extract.0.24% grape seed extract,4% xylo-oligosaccharide and 1% tricalcium phosphate.In this paper,digestion simulation in vitro showed that: in vitro glycemic index of quinoa is 70.76,in vitro glycemic index of quinoa treated by extrusion was 87.69,the best formula of quinoa compound granule has an in vitro glycemic index of 73.36.The determination of basic nutritional indexes showed that the protein content of quinoa compound granule is 11.8 g/100 g DW,the content of total fat was 5.8% dw,linoleic acid and linolenic acid accounted for 46.55% dw and 6.32% dw of total fat,which was higher than that of quinoa.The hypoglycemic effect of quinoa compound granule was evaluated in this paper.C57BL/6J male mice were injected intraperitoneally with streptozotocin(STZ)in several low doses to induce diabetic mice with hyperglycemia.The hypoglycemic effect of Quinoa Compound Granule with high-fat and high-sugar feed was studied.The results showed that the granule could improve the weight loss induced by STZ in mice,increase the swelling degree and hydrolysis rate of the whole diet,increase the digestive level of the mice in the course of eating,increase the food intake of mice,improve the problem of excessive blood sugar concentration after eating in STZ-induced diabetic mice,and have a certain degree of insulin resistance in diabetic mice.It can decrease the fasting blood sugar concentration by34.37%and increase the fasting insulin level by 43.6%in STZ-induced diabetic mice.It can effectively improve the inflammation response of STZ-induced diabetic mice and the liver and kidney function damage in mice.
