| In our country red jujube can get a production of 3 500 000t per year.But there are about 95%of harvest jujube are been dried,only a small amount of jujube are used for fresh eating or deep processing.So the developmengt of red jujube deep processing technology and industry is limited.We use the jujube paste viscosity of rheological properties as index optimize the enzymolysis process parameters,study the technology of date powder processing,and did the process preliminary design.We also studied the influence of different treatment to the amount of total flavonoids,total polyphenol,total sugar and polyphenol content components in jujube.The conclusions are as follows:(1)The lower the viscosity index of jujube paste with enzymolysis the better solubility of date powder.Jujube paste hydrolyze under the conditions of the mass ratio 0.20,enzyme amount 0.27 mL/g,temperature 43℃,time 4 h,we get the lowest viscosity index.(2)The optimal spray drying technological parameters are mass ratio of 0.20,the anount of maltodextrin is equal to the amount of dried date in jujube paste,the feed liquid import temperature of 120 ℃,the peristaltic pump feeding quantity of 600 mL/h.(3)The different theatmnt of enzymolysis,homogenization and spray drying can effent the amont the bioactive substance in jujube paste and date powder.The content of total flavonoids gradually decressed from 2.902mg/g to 2.581mg/g.The content of total polyphenol increased after enzyme hydrolysis from 4.412mg/g to 4.575 mg/g and than reduced to 3.797 mg/g after spray drying.The content of total sugar gradually increased.(4)7 polyphenols were determined by HPLC,which is protocatechuic acid,catechin,coffee acid,epicatechin,rutin,cinnamic acid and quercetin.And 70%of the determined polyphenols is rutin.The content of coffee acid increased and than reduced after enzyme hydrolysis,The content of quercetin increases at first and reduced after spray dried,the content of the other 5 polyphenols decress with the theatmnt of enzymolysis,homogenization and spray drying.(5)This study did the date powder processing preliminary design of 16t per class.Including workshop layout and process flow diagram.The material balance are:the red jujube consumptionis 13.6 t/class,the maltodextrin consumption is 8.1 t/class,water consumption is 197.0 m3/class,the biggest electricity load of 669.2 KW,maximum total steam consumption for 1170kg/h. |
