Golden jujube is mainly planted in cangzhou of hebei province,wide planting area,large output.Golden jujube is a kind of food with high nutritional and contains many kinds of ingredients.Golden jujube is good for health and contains multiple health functions.It is popular as a natural health food.In order to take full use of Golden jujube resources,we optimize the conditions of producing clarified juice,research antioxidant activity of jujube extractive substance,golden jujube juice and jujube products.Main results are as follows:(1)The fresh weight increased duing the whole period and climbed to the peak 107 days after flowering.Golden jujube was rich of water and used directly as food for people.It was rich of suger when mature and was suitable for making canding or juice.The change of the content of total phenolics and flavonoids was notability and steadying 90 days after flowering,steadied at 20.0~26.7 mg/g and 4.7~5.3 mg/g.The content of vitamin c was stable at the preliminary stage of development,increased 50 days after flowering and reduced gradually when mature.(2)During development the extractive substance have strong scavenging capabilities for DPPH free radical,superoxide anion radical,hydroxyl radical and nitrite radical.The clearance rate was related to days after flowering and substrate concentration.Antioxidant activity before the mid was stronger than the late during fruit development,the strongest 70 days before and after.The variation of clearance rate was the same with the content variation of antioxidants in fruit.(3)We extracted golden jujube juice with the whole jujube.The results showed that the optimum extraction conditions were:the temperature 50℃,the extraction time 200 min,the material/liquid ratio of 1:10(g/mL),extraction rate was to 31.8%.The clarification characteristic of four enzymes for golden jujube juice was studied.The result showed the optimum conditions of the complex enzyme were:amount of added 0.015%(V/V),temperature 45℃,time 120 min.The transmittance of golden jujube juice was up to 77.0%.The absorption characteristic of three kinds of macroporous resins for golden jujube juice was studied.The result showed the optimum absorption conditions of resion LX-10C were:resion amount 7.0%(m/V),room temperature,time 180 min.The golden jujube juice after decolorization showed a clear and transparent appearance and a strong aroma.The dynamic absorbing behavior of LX-10C were:flow rate 3 BV/h,pH value 4.0~4.5,concentration of feed 10.0~14.0%.(4)The results showed that golden jujube juice and dilution juice of concentrate have strong scavenging capability.The antioxidant activity of golden jujube juice,dilution juice of concentrate and Vitamin C(0.50 mg/mL):DPPH free radical scavenging capacity followed by Vc(IC50 0.12 mL),dilution juice of concentrate(IC50 0.17 mL),golden jujube juice(IC50 0.32 mL).Hydroxyl free radical scavenging capacity followed by dilution juice of concentrate(IC50 0.17 mL),Vc(IC50 0.19 mL),golden jujube juice(IC50 0.33 mL).Oxidized anionic radical scavenging capacity followed by Vc(IC50 1.03 mL),dilution juice of concentrate(IC501.57 mL),golden jujube juice(IC50 5.95 mL).Nitrite scavenging capacity followed by Vc(IC50 0.038 mL),dilution juice of concentrate(IC50 0.35 mL),golden jujube juice(IC50 0.97 mL).Reducing power followed by dilution juice of concentrate,Vc,golden jujube juice.(5)Golden jujube juice has very strong antioxidant activity.The results showed that the processing of golden jujube juice was suitable and practical.The process of extraction,enzymatic hydrolysis,filtration,decolorization and vacuum concentration could retain the nutritional characteristics of the golden jujube juice and meet the need of industrial production.The antioxidation experiments indicated that Ejiao and crystal candied jujube had antioxidant activity,but it was weaker than golden jujube. |
