Cyprinus carpio's origin is Guangxi.Because its meat is delicious,fineness,no fishy smell,and few intermuscular thorns,it is generally welcomed by the masses.In recent years,it has been popularized by Guangdong and Yunnan.In addition,other places have been introduced one after another and have achieved good returns.However,there is no comprehensive and systematic analysis of the relevant indicators of the nutrient composition and muscle quality of C.carpio.Therefore,it is very necessary to carry out a comprehensive and systematic evaluation and analysis of the meat quality characteristics of C.carpio.Under this background,this study use C.carpio cultured in ponds and paddy fields as test materials,using modern equipment such as physical property testers,high performance liquid chromatography,high efficiency gas chromatography analyzers,and automatic amino acid analyzers.The meat quality of the C.carpio and the living environment of the C.carpio were systematically analyzed and studied,and the following main results were obtained:1.Under the two breeding modes,the muscle quality of C.carpio is significantly different.The muscle hardness of C.carpio cultivated in paddy fields is higher than that of C.carpio cultivated in ponds(P > 0.05),and the shear force is significantly(P <0.05)higher than that of C.carpio cultivated in ponds,and the viscosity is significantly(P <0.05)less than C.carpio cultivated in ponds,therefore,the meat quality of rice field cultured C.carpio is softer,the absolute value of adhesion is small,and it is not easy to stick teeth and chew.From the perspective of nutrition indicators,the content of muscle protein and fat in paddy field cultivation group is significantly lower than that in the pond cultivation group(P <0.05),but the water content is higher(P <0.05);?EAA/TAA is significant.It was higher than the pond cultivation(P <0.05),and the proportion of umami taste amino acids in paddy field cultivation group was significantly lower than that in the pond cultivation group(P <0.05);the content of monounsaturated amino acids and EPA+DHA in paddy field cultivation group Significantly higher than the pond cultivation group(P <0.05);the calcium content of paddy field cultivation group was significantly lower than the pond cultivation group(P<0.05),while the contents of potassium and phosphorus were significantly higher than the pond cultivation group(P <0.05));The IMP of the paddy field cultivation group is much higher than that of the pond cultivation group.2.Under different breeding modes,there are differences in the water body of farmed C.carpio.In order to understand the differences in the content of various indicators in the water body of different grass carp cultivation methods,after the 12-week cultivation experiment,the pond culture water and the rice field culture water were sampled,and potassium persulfate oxidation-UV spectrophotometry,Nessler's reagent spectrophotometry,N-(1-naphthyl)-ultraviolet spectrophotometry,naphthalene ethylenediamine hydrochloride colorimetry,4-aminoantipyrine extraction spectrophotometry,suspension gas chromatography Detection were used to detect the total phosphorus content,ammonia nitrogen content,nitrate nitrogen,nitrite nitrogen,volatile phenol,suspended solids in the water body,The results showed that the ammonia nitrogen,total phosphorus,volatile phenol,suspended solids,and total hardness in the rice paddy culture were significantly higher than those in the pond(P < 0.05).3.In the paddy field culture mode,C.carpio were divided into three groups according to their body weight,namely group S(<50g),group M(50g-100g)and group L(>100g),and the muscle quality of different sizes of C.carpio was analyzed.The results were as follows:(1)routine nutrient composition: there was a significant difference between the protein content and water content of the experimental fish among the three groups(P < 0.05),and both groups showed an increasing trend with the increase of body weight.The muscle fat content(2.90%)and ash content(1.53%)of the M group were significantly higher than those of the other two groups(P < 0.05).(2)Inosine content: the M group was significantly higher than the other two groups(P < 0.05).(3)Amino acid content: there was a significant difference in methionine content between the three experimental groups(P < 0.05),while the other indexes were not significant.Fatty acid.(4)Fatty acid content: three C.carpio muscle fatty acid index of the experimental group there were significant differences(P < 0.05),only the linolenic acid content of no significant difference between the three groups(P > 0.05),which M group of palmitic acid,stearic acid,arachidic acid,22 carbon diene acid content is significantly higher than the other two groups(P < 0.05),palm acid,docosahexaenoic acid,? MUFA with the rise and rise of weight,? PUFA and ? n-6 PUFA content as the rise and fall of the weight.(5)Mineral element content: there was no significant difference in the content of potassium among the three groups(P > 0.05),the content of calcium in group S was significantly higher than that in the other two groups(P < 0.05),and the content of sodium,zinc,iron,magnesium and phosphorus in group L was significantly higher than that in the other two groups(P < 0.05).(6)Muscle texture index: the muscle viscosity of group M was significantly higher than that of the other two groups(P < 0.05),and the cohesion was slightly lower than that of group L,and significantly lower than that of group S(P < 0.05).The hardness,viscosity and masticability of group M were the highest,but there was no significant difference between group M and the other two groups(P>0.05).The difference of elasticity,restoring force and shear force between the three groups was not significant(P>0.05).In summary,the muscle quality of rice field cultured C.carpio is better than that of pond culture,with higher umami taste and more balanced nutrition structure;in terms of specifications,50-100 g C.carpio has a better taste,better flavor and nutrition level More balanced,suitable for market consumption...
