Mass spectrometry can rapidly analyze sample information with high sensitivity and resolution,and currently liquid chromatography-mass spectrometry is widely used in the field of analysis,but before the samples are subjected to the LC-MS analysis,a pretreatment process,such as extraction and precipitation,is necessary,which is timeconsuming and labor-intensive.In this study,electrospray mass spectrometry was applied to sugar crops to investigate the rapid identification of relevant components and the mechanisms of chemical reactions in the sugar production process.The main contents and conclusions are as follows:1.The structural analysis of steviol glycosides in stevia was carried out using electrospray tandem mass spectrometry.The results showed that steviol glycosides were spiked with hydrogen,sodium and potassium ions in the positive ion mode,minus hydrogen and chloride ions in the negative ion mode,and tandem mass spectrometry studies were performed in the negative ion mode,with steviol glycosides losing the C13 and 19 substituents.Conclusion: The skeleton structure of steviol glycosides was m/z 318.Several steviol glycosides were determined from the complex stevia composition according to the characteristic ionization pattern in positive and negative ion modes,and their substituents were identified as glucose and rhamnose according to the tandem mass spectrometry pattern,and their structures were determined2.In this experiment,we used electrospray tandem mass spectrometry to identify and analyze the sugar production process of white sugar,and identified the structures of sucrose-like glycosides in sugar beet sucrose and brown sugar,respectively;we heated sugar beet sucrose to simulate the heating process in sugar beet production process,in which the sucrose would undergo caramelization reaction,and identified the caramelization reaction products in it;we used the maillard reaction between glucose and amino acids to simulate the reaction between sugars and alkaloids in the sugar production process was simulated to identify the products of the maillard reaction;the beet molasses was identified and analyzed.The results showed that sugar beet sucrose loses 18,162,180 Da and other fragment peak under tandem mass spectrometry;the compounds obtained by caramelization reaction showed loss of 18,113,131,226 Da and other fragment peak under tandem mass spectrometry,and the caramelization products were roughly divided into two structures one structure represented by m/z 566,679,792 ions,and the other structure represented by m/ z588,701 ions as the representative;beet sugar production process will occur in the maillard reaction,its product performance in the tandem mass spectrometry as the loss of water molecules,amino acid molecules,etc.;molasses not only contains sucrose-like components,part of the caramelization reaction products,but also in the sugar production process when precipitating molasses accompanied by m/z 470,482,521 ions,may be sucrose-like components.This study uses electrospray tandem mass spectrometry for qualitative analysis of complex matrix samples,in which pure compounds are not necessary,so that perhaps replacing the usual methods that require plentiful and high-purity samples and that need multiple technique to be resolved together.It is an important alternative method for the future identification of the composition of sugar crop products.
