Canteens of medium and large enterprises,schools,and areas with special circumstances such as earthquakes,floods and sudden epidemics.In wartime conditions,due to the large number of diners,the supply of meals is large,the requirements for cooking quality are lower than that of restaurants,and the cooking staff is in short supply Compared with restaurant chefs,cooking labor is more intensive and overloaded.The automatic cooking machine has low requirements for the skill level of the cooking personnel,and can meet the demand for rapid cooking of a large number of dishes,and the vehicle-mounted automatic cooking machine is mobile and flexible,which can well solve the above-mentioned contradiction between supply and demand.The quality of Chinese cooking involves three influencing factors:the shape of the dish,the seasoning and the heat.The heat control ultimately determines the cooking quality of the cooking machine.Most of the existing cooking machines have passed a large number of experiments to determine the key parameters of cooking heat control.The theory of thermodynamics has been deeply researched and applied in the field of food processing,and these results can well guide the automation,digitization and intelligence of dish processing in the cooking process.It is very important to study the key mechanism and reasonable cooking action model of the cooking machine to complete the automatic control of the heat in the cooking process.In this paper,a rotary cooking machine is designed.Based on the cooking dynamics model and the theoretical analysis basis of heat transfer,as well as the ANSYS simulation of the heat transfer process,the key mechanism action model is determined,and the mechanical control system hardware and Software development.The main research contents of this article are as follows:(1)Optimize the structure design of the cooking machine.The key mechanisms include stove,fire shield,pot body and spatula.(2)Combining the cooking kinetic model and the heat transfer process,a method for establishing the action model of the key mechanism is given.The theoretical calculation of the proportion of air required for the full combustion of diesel,the study of the heat transfer process from the heat source to the dish during the cooking process,and the verification of the correctness of the theoretical calculation of the ratio of fuel and air incidence through ANASYS modeling,and the surface temperature of the cooking machine's pot body The relationship between the amount of fuel,the amount of air incident,the speed of the pot and the speed of the spatula,combined with the movement record data in the manual cooking process,establishes the action model of the key mechanism of the cooking machine.(3)Based on the requirements of key mechanism action models,a control system architecture combining STM32 and ARM processors and a human-machine interface developed by QT language are designed.The test experiment was designed for the action model of the key mechanism.Through the measurement and analysis of the stability and response speed of the control motor of the pot body,spatula and dumping action,the feasibility of the control system was verified.
