| As one of the essential substances of human body,fatty acids not only provide energy for people’s daily life,but also prevent cancer and promote the intellectual development of children.But the excessive intake of fatty acids can also be harmful.For example,it may increase the risk of coronary heart disease and sudden cardiac death and in addition,it is easy to cause obesity.Fatty acids cannot be synthesized by the human body,but can only be supplied by food.Therefore,in order to protect the health of people,it is necessary to study the content of fatty acids and the daily intake of residents.Firstly,we analyzed the content of fatty acids in the fifth Chinese Total Diet Study,and got the main food sources and fatty acid levels in each city,in my dissertation.Secondly,we carry out spatial auto-correlation analysis on the content data,explore the spatial distribution pattern of fatty acids from the global and local perspectives,carry out hierarchical clustering analysis on them,and analyze the distribution characteristics of fatty acids with the results of clustering.Finally,we calculated the per capita intake of fatty acids among Chinese residents,evaluated the intake and constructed a regression model to analyze the influencing factors,using the data of dietary consumption and fatty acid content.The main conclusions are as follows:The provinces and cities with high content of saturated fatty acids in Chinese diet are mainly Shaanxi Province,Hunan Province and Hubei Province;the provinces and cities with high content of monounsaturated fatty acids and trans fatty acids are mainly Shaanxi Province;the provinces and cities with high content of polyunsaturated fatty acids are mainly Heilongjiang Province,Shaanxi Province and Hebei Province;meat is the main food source of fatty acids,and the content of fatty acids in fruits is the lowest.The global spatial auto-correlation results show that the contents of monounsaturated fatty acids are positively correlated globally,but the other three fatty acids have no global spatial auto-correlation;Local spatial auto-correlation analysis showed that all the four types of fatty acids had local spatial auto-correlation,and Henan Province was the main hotspot of fatty acids;From the results of hierarchical clustering analysis,we can find that the distribution of saturated fatty acids and monounsaturated fatty acids were the most similar,while polyunsaturated fatty acids and trans fatty acids are the most similar.For the distribution of fatty acids in twenty cities,the situation of Sichuan Province,Jiangxi Province and Qinghai Province were similar,Hunan Province and Hubei Province were also very similar,fifteen cities including Zhejiang Province,Shanghai and so on were similar,apart from that,Shaanxi Province and Heilongjiang Province are slightly different from other cities.According to the result of exposure assessment,the intake of monounsaturated fatty acids in our nation exceeds the recommended level of WHO/FAO,and people consume too much meats and too little fruits;Per capita GDP,average salary of employed personnel,regional male-female ratio and urbanization rate are the factors that significantly affect the intake of fatty acids,and due to the existence of spatial heterogeneity,each factor has different influence on different regions. |
