Panax ginseng C.A.meye is a new ginseng processed product after red ginseng,which is obtained from roots of Araliaceae plants through nine steaming,nine exposure and repeated processing.Shen Nong’s Materia Medica Scripture records that ginseng has the effects of "invigorating primordial qi,restoring pulse,strengthening spleen,benefiting lung,tranquilizing mind,improving intelligence,nourishing yin and invigorating yang".It is a good product for resisting summer heat and nourishing yang in spring and summer.This subject studied the processing technology of black ginseng,the extraction optimization method of melanoid from black ginseng,and the antioxidant activity of melanoid from black ginseng and its fractions.The results showed that:With the increase of processing times,the reducing sugar content and polyphenol content increased first and then decreased.The higher the temperature,the faster the reducing sugar content and polyphenol content increased first and then decreased.The content of amino nitrogen decreased gradually and the temperature increased and decreased faster.The content of melanoidin gradually increased,and the higher the temperature,the faster it increased.The water content decreases gradually,and the higher the temperature,the lower the water content.Higher drying temperature can accelerate the browning process of Maillard reaction,and the drying condition at 70℃ is better than the other two temperatures.The optimal extraction process of melanoid from black ginseng is 39% ethanol solution,solid-liquid ratio of 1:70(g/ml),water bath time of 57 min and water bath temperature of 84 ℃.Under the conditions of this process,the absorbance of the melanoid extract in black ginseng was measured to be 0.445.The relative error is about 5.72%,compared to the response surface analysis predicted value of 0.472.At the same time,under the condition of the optimal extraction process,the best extraction stage was determined,and the extraction rate was 91.38%.Melanoid and its fractionated products in black ginseng have significant DPPH radical,hydroxyl radical and superoxide anion radical scavenging ability.Under the same melanin concentration standard,the scavenging ability to DPPH radical from high to low is HWM>LWM>M,and the scavenging ability to hydroxyl radical from high to low is LWM>M>HWM.Potassium ferricyanide was used to determine the total reducing power of melanoidin and its fractionated products.the total reducing power was HWM>M>LWM from high to low.
