Aronia melanocarpa is rich in Minerals,protein,amino acids and other nutrients,and has higher antioxidant activity than that of blueberries,cranberries and cranberries.It also has the effects of lowering blood sugar,antibacterial and anti-inflammatory,and has rich nutritional and medicinal values.At present,there are differences in the quality of fruits from different producing areas,the processing and storage period is short,the comprehensive utilization rate is low,and the benefits of farmers and processing enterprises cannot be guaranteed.Therefore,data collection for the quality indicators of Aronia melanocarpa from15 different producing areas was aimed at rationalizing the quality evaluation standards of Aronia melanocarpa,and to provide a theoretical reference for the selection and breeding of Aronia melanocarpa and the development of deep-processed products.The main research contents and results are as follows:(1)The physical and chemical quality,nutrient quality,texture quality and sensory quality of Aronia melanocarpa from 15 producing areas were tested.The results showed that9 of the 12 quality indicators had a coefficient of variation over than 15% which indicating significant quality differences between different origins.The principal component analysis reduced the dimensions of 12 quality indicators into 3 principal components,and their cumulative variance contribution rate was up to 77.42%,which could well express the quality of Aronia melanocarpa.The top 3 comprehensive origins were HLJ-MDJ-8,LN-SY-1,LNTL-6,which were rich in polyphenols,flavonoids,and anthocyanins,making them more suitable as a raw material for deep-processed products.GS-JC-14 had high sweetness and good taste,so it was more suitable for fresh food.(2)Using HPLC technology,a method for the determination of cyanidin-3-Ogalactoside was established.The mobile phase composition was methanol(A)and 0.5%formic acid aqueous solution(B).Gradient elution program was as follows: 0-5 min,4% A;5-8 min,30%-40% A;8-10 min,40%-56% A;10-11 min,56%-60% A;11-14 min,60%-70%A;14-16 min,70%-100% A.The chromatographic column temperature was 25°C,the injection volume was 5 ?L,the flow rate was 0.800 m L/min,and the detection wavelength was 520 nm.The RSD values of precision,repeatability and stability were all less than 3%,the average recovery rate was in the range of 97.14%-99.37%,RSD<0.68%,indicating that the method had sufficient accuracy and can be used for the qualitative and quantitative analysis of cyanidin-3-O-galactoside.(3)The extraction conditions were optimized through a single factor experiment.The best extraction conditions for the anthocyanins of Aronia melanocarpa were as follows: 70%ethanol-water,Liquid to material ratio 30:1m L/g,Extract for 45 minutes at 45°C.Under these conditions,the yield of anthocyanins from Aronia melanocarpa was 4.989 mg/g,and the extraction process was short time consuming and efficient.(4)Using the methods of DPPH,ABTS and FRAP,the antioxidant activity of Aronia melanocarpa from different origins was compared.The results showed that the selected 15 producing areas of Aronia melanocarpa had antioxidant activity,but the antioxidant activities of Aronia melanocarpa from different producing areas were quite different.Among them,HLJ-MDJ-8,LN-SY-1 and LN-TL-6 had better antioxidant activity,while TJ-JH-13?HBBD-12 and HB-QHD-11 were inferior to other producing areas in terms of antioxidant activity.And the content of cyanidin-3-O-galactoside was closely related to the antioxidant activity.
