The rapid acquisition of apple quality data and the effective grading of quality are of great importance to the economic development of the apple industry in Aksu Fuji apples,which is a special agricultural product in southern Xinjiang.In this study,32 indicators of Aksu Fuji apples,such as appearance,size and soluble solids,were examined to explore the correlation characteristics among the quality indicators,construct a prediction model for the correlation quality indicators,and then correlate the 32 quality indicators to provide a scientific and quantitative analysis tool for the comprehensive valuation and fine grading of the quality of Aksu Fuji apples,and at the same time,establish a basic Database(1)The 32 quality indicators of Aksu Fuji apples were measured,including 994 appearance quality indicators of size,mass and volume;650 colour indicators:1672 physical and chemical indicators of soluble solids,total sugar,total acid,solid-acid ratio and sugar-acid ratio;350 indicators of each of the four monosaccharides and nine polyphenols;and 7 indicatorsof ash,protein,starch,water content,carbohydrate,energy and dietary fibre.The results showed that there were 165 data for 7 indicators of nutritional quality,837 data for total phenols and 349 data for 4 indicators of VC,γ-aminobutyric acid and glutamic acid.The results showed that the quality of Aksu Fuji apples at maturity was in accordance with GB/T 10651-2008 "Fresh apples",NY/T 1075-2006 "Red Fuji apples" and DB65/T 3503-2020 "Aksu apples",and the quality was better than the range specified in the relevant standards.After descriptive and correlation analyses,six groups of quality indicators were obtained,including mass and volume,soluble solids and total sugars,quercetin glycosides and quercetin,quercetin glycosides and quercetin rhamnosides,water content and carbohydrates,and water content and energy,which were highly correlated.(2)Using the six sets of highly correlated indicators modelling data,the least squares method was used to construct prediction models for the above correlated indicators.The correlation coefficients R2≥0.847 in the training set and R2≥0.757 in the test set were all well fitted,indicating that the quality indicators could be effectively predicted by constructing prediction models.(3)With reference to the existing grading standards,the initial grading of each 1 mm size and each 1%soluble solids content was carried out,and the remaining 30 internal indicators were graded twice in order according to the principle of no significant difference within grades.The results show that the mean values and ranges of the indicators tested were within the range of the two control tables,indicating that the Aksu Red Fuji apple quality indicators mean value control table and range of determintion control table can be used to quickly obtain the content range of 30 quality indicators of Aksu Fuji apples and provide a reference for the quality grading gradient in accordance with the relevant standards.
