As the environmental problems of aquaculture waters become increasingly prominent,people pay more and more attention to the safety of shellfish food,and it has become an indispensable and important step to purify shellfish before entering the market.In this study,we researched the application of ultrasound in the process of reducing bacteria and purifying solen and optimized the applied conditions.The results showed that:solen have a good tolerance to ultrasonic waves with a frequency of 40 kHz and a power of 150 W,and their half-lethal time is as long as 317 min.What is more,the ultrasonic have no significant effect on the survival rate of solen when store atr 4?,but it will damage the meat to a certain extent,and the damage will increase with the prolongation of the ultrasonic treatment time;However,this ultrasonic waves have a significant bactericidal effect on Vibrio parahaemolyticus;using the ultrasonic treatment for 10 minutes and static water purification for 6 hours,the concentration of Vibrio parahaemolyticus in solen reduced by more than 95%;using the ultrasonic treatment for more than 5 minutes,running water(flow rate of 1.5 L/h)purification for 3 hours,the concentration of Vibrio parahaemolyticus in solen can be reduced by more than 95%.In addition,when the ultrasonic treatment time is more than 5 minutes,and the purification time is more than 6 hours,it has a very significant effect on promoting the discharge of sediment in solens.Thus,the best conditions for purifying solen and reducing bacteria using ultrasonic with runing water were:ultrasonic intensity is 40 kHz,150 W,ultrasonic treatment time is 6 min,purified water flow rate is 1.5 L/h,and water purification time is 6 h.This results are low in cost,convenient to operate and apply,effective,which can significantly improve the quality and safety of shellfish products,extend the shelf life of the products,and have greater development value and good application prospects.
