Dendrobium officinale as China’s traditional valuable medicine and food dual-use substance,is known as the first of the "Nine Chinese Fairy Grasses" and is also called "Life Saving Grass".In recent years,Dendrobium officinale industry has been vigorously developed in Hunan province,because the area is about 600 m above sea level,warm and humid climate and good ecological environment is very suitable for the cultivation of Dendrobium officinale.The quality of Dendrobium officinale in different areas is different.At present,the active ingredients and their functions in Dendrobium officinale grown in the wild in western Hunan have not been further Analytical study.The essay measures the main nutrient and functional components of Dendrobium flower and Dendrobium officinale and their antioxidant activity.Meanwhile,fermented beverages were developed using Dendrobium with higher polyphenol and total flavonoid content,which provided scientific foundation for Dendrobium officinale and provided theoretical support for the development of local medicinal and edible resources in Hunan.In this experiment,Dendrobium officinale and Dendrobium officinale flower in Western Hunan were used as raw materials to determine and analyze their nutritional functions.The total polyphenol content of Dendrobium officinale and Dendrobium officinale flower in Western Hunan was measured to be 4.78±0.13 mg/g,15.7±0.44 mg/g,respectively;the total flavonoid content was 1.91±0.19 mg/g,5.55±0.27 mg/g;the crude polysaccharide content was 370.31±19.78 mg/g,173.13±10.04,respectively.mg/g;the moisture content was9.83±0.21%,11.80±0.58%;the protein content was 0.63±0.03%,0.45±0.03%;the content of alcohol-soluble leachate was 7.12±0.14%,10.05±0.12%;the ash content was 4.68± 0.05%,6.61±0.17%.The crude polysaccharide content,moisture content,alcohol-soluble extract content and ash content of Dendrobium officinale in Western Hunan met the standards stipulated in the 2015 edition of the Chinese Pharmacopoeia.The crude polysaccharide content of Dendrobium officinale in Western Hunan was significantly higher than that of Dendrobium officinale in Western Hunan(P < 0.05),and the total flavonoids and polyphenols content of Dendrobium officinale in Western Hunan were significantly higher than that of Dendrobium officinale in Western Hunan(P<0.05).These nutritional functional components are important components of the active ingredients of Dendrobium officinale,which are closely related to its pharmacological functions and have great value for development and utilization.Five methods were used to study the antioxidant activities of the extracts of Dendrobium officinale and Dendrobium officinale flower.Search results that in terms of antioxidant capacity,the flower extract of Dendrobium candidum was much higher than that of Dendrobium officinale and the antioxidant capacity of the ethanol extracts was significantly higher than the water extracts(P﹤0.05).The IC50 values of Dendrobium candidum alcohol extract under three systems of DPPH,ABTS and superoxide anion were136.65 μg/m L,140.76 μg/m L and 458.66 μg/m L,respectively.Combining the FRAP and ORAC antioxidant test results and equivalent value calculations,it can be seen that in terms of FRAP and ORAC values,the alcohol extracts of Dendrobium candidum were higher than the other three samples.When the concentration is 200 μg/ml,the FRAP value and The ORAC values were 0.1572±0.00631 mmol Fe SO4/g and 743.10±32.79μmol TE/g,respectively.When we test total polyphenols contenr and flavonoids content,the content of alcohol extract from Dendrobium candidum is higher than that from Dendrobium candidum(P﹤0.05)and the antioxidant capacity of flavonoids and polyphenols in Dendrobium candidum and flowers was higher than that..Taking the total acid,p H,viable bacteria count and sensory score as evaluation indexes and using single factor test and orthogonal test,the best process conditions of Dendrobium candidum fermented beverage were found:the added amount of Dendrobium officinale flower liquid is 4%,and the added sugar amount was 4%,Inoculation volume 0.15%,fermentation time at 42℃for 6h,to obtain Dendrobium officinale fermented beverage.Dendrobium officinale fermented beverage is a light red,natural fragrance with Dendrobium officinale flower.The beverage has a delicate taste,a stable and uniform system,and a good taste.It is nutritious and has a good market prospect... |
