Hairtail is the development of the Marine economy in the coastal region one of the most important fish products,the current application of preservation technology mainly based on the traditional frozen preservation is given priority to,but frozen energy consumption and easy to damage the fish flavor and protein structure,etc.,so using load the edibility of natural antibacterial coating material for preservation processing to extend the shelf life of hairtail hairtail method is more efficient.Clove essential oil and tea polyphenols were highly effective antimicrobial properties and oxidation resistance of natural antibacterial agent,and nano cellulose,as a kind of biodegradable and biocompatibility,good film base material,was widely studied in recent years is used to replace traditional packaging materials,can be used to compound preparation with antibacterial fresh-keeping agent and antimicrobial edible coating film.Therefore,in this paper,a compound antimicrobial solution was prepared by combining essential oil and tea polyphenols as natural antimicrobial agents,then the synergistic effect under different ratios of the two was studied through the inhibition rate test and the inhibition circle test,and the antibacterial effect and antioxidant performance of the compound antibacterial solution with the best synergistic effect on the characteristic spoilage bacteria of fish were investigated.On this basis,the selection of composite antibacterial liquid which has the best synergy and nano cellulose film,the mass concentration of cationic cellulose membrane was studied physical properties and antibacterial properties of antibacterial composite films,and different mass concentration of cationic nanometer fiber composite antimicrobial preservation liquid applied in hairtail fresh-keeping storage experiment was carried out,The effect of compound antibacterial fresh-keeping solution with different cationic nano-cellulose mass concentration on the quality of hairtail was studied.The main research results are as follows:1.The minimum inhibitory concentration of the antibacterial solution was 0.4%,and when m(EO):m(TP)=2:1,the synergistic antibacterial effect of the compound antibacterial solution(2E/T)against Escherichia coli and Staphylococcus aureus was the strongest,and the synergistic coefficients were 4.46 and 1.04,respectively.When composite antibacterial liquid(2E/T)of the total concentration of 0.6%,the characteristics of fish spoilage organisms inhibitory effect is most valuable.The inhibition duration of E.coli,Staphylococcus aureus,Vibrio parahaemolyticus and Pseudomonas aeruginosa at this mass concentration was 36 h,60 h,60 h and 72 h,respectively.The compound antibacterial solution has a very strong antioxidant effect.When the concentration of the compound antibacterial solution is 0.8wt%,the DPPH free radical scavenging rate can reach 89.25%.2.By transmission electron microscope(SEM)the results show that the quaternary amination cellulose membrane(Q-NFC)surface than the TEMPO oxidation nano cellulose membrane(T-NFC)surface more smooth,and with the increase of concentration of cationic nano cellulose,the compound antibacterial film surface is more and more dense,the thickness of the membrane increases gradually,the tensile strength increases gradually,the blocking performance also increased,but elongation at break reduced gradually,while 0.3%of cationic nanofiber and composite antibacterial liquid composite film of 0.6%,the tensile strength of the membrane for(100.05-1.01 MPa),elongation at break(1.89+0.65)%.Compared with the anionic nanocellulose antibacterial film,the cationic nanocellulose antibacterial film with the same mass concentration has lower tensile strength and elongation at break,but better barrier performance.The oxygen transmittance of 0.3%anionic nanocellulose antibacterial film(2E/T/T-NFC/SA)is1.002 cm~3·cm/m~2·d.However,the oxygen transmittance of 0.3%cationic nanocellulose antibacterial film(2E/T/0.3Q-NFC)is only 0.708 cm~3·cm/m~2·d.The light transmittance of nanocellulose antibacterial composite film with compound antibacterial solution decreased significantly.3.Taking pH value,TVB-N value,total number of colonies(APC),TBA value,sensory score,whiteness value and water retention as indexes,the preservation effects of different mass concentrations of cationic nano-cellulose combined with compound antibacterial solution on hairtail fish were studied.It's found that Q-NFC compound antibacterial solution could better delay the increase of pH,TVB-N,APC and TBA values and the decrease of sensory score,whiteness value and water retention,and 0.3%Q-NFC compound antibacterial solution had the best preservation effect,which could prolong the shelf life of hairtail for 8 days.According to various physiological and biochemical indexes of hairtail,the shelf life of different groups of hairtail was as follows:0.1Q-NFC(9 d)<2E/T-0.6(10 d)<2E/T/0.1Q-NFC(11 d)<2E/T/0.2Q-NFC(12 d)<2E/T/0.3Q-NFC(14 d).
