| In this paper,germinated selenium-enriched rough millet was used as raw material,antioxidant activity was taken as index,and extrusion was used as ripening method.Through single factor and response surface test,the best technological conditions of extrusion were determined,and the germinated selenium-enriched rough millet puffed powder under the best technological conditions was compounded to obtain germinated selenium-enriched rough millet instant powder with remarkable antioxidant activity.The effects of different packaging methods on the storage stability of germinated selenium-enriched rough millet instant powder were studied.The main results are as follows:1.Compared with germinated rough millet,the content of flavonoids,polyphenols,oryzanol,carotenoids,total selenium,and selenium content in protein of germinated selenium-enriched rough millet were greatly increased.DPPH free radical scavenging activity,hydroxyl radical scavenging activity,superoxide anion free radical scavenging activity,and reducing power of alcohol extract and protein of germinated selenium-enriched rough millet were significantly higher than alcohol extract and protein of germinated rough millet.(p<0.01)2.On the basis of single factor experiment,response surface methodology was used to optimize the extrusion process parameters: water content with 15%,screw speed at 33 Hz,and barrel temperature at 180℃.3.In order to improve the edible quality and flavor of germinated selenium-enriched rough millet instant powder,the formula of germinated selenium-enriched rough millet instant powder was studied.The highest sensory score of the product was 77.00(out of 80)while the contents of puffed powder,yellow refined powder,black sesame powder,maltodextrin and sucrose of germinated selenium-enriched rough millet were 51%,10%,6%,22% and 11%,respectively.4.Taken water content,fatty acid value,peroxide value,malondialdehyde value and sensory quality as indexes,the effects of adding antioxidant(TBHQ),vacuum packaging and nitrogen filling packaging on the storage stability of germinated selenium-enriched rough millet instant powder were studied.Compared with the common packaging,during storage at 50℃,the storage time with antioxidant delayed by 7 d,and the vacuum and nitrogen packaging were 8 d and 9 d,respectively.According to the relationship between temperature and oil shelf life coefficient,it could be inferred that adding antioxidant(TBHQ),vacuum packaging and nitrogen filling packaging during storage at 20℃ can delay 56 d,64 d and 72 d,respectively. |
