Trichiurus lepturus is also called plaice fish,wakame fish,and white edge fish.It has a body length of about 0.8-1 m and a thickness of about 2-3 cm.The whole body is silvery white and bright.The fish eyes are small and transparent.The fish skin is slippery and easy to eat.,Is a common seafood on the Chinese table.Trichiurus lepturus has high fat content,and the aldehydes and ketones generated by oxidation will reduce the freshness of trichiurus lepturus during sale and storage.Therefore,trichiurus lepturus is more perishable than other marine fishes,and will suffer disadvantages in terms of freshness,color,flavor,texture and nutritional value.influences.Therefore,searching for a new,practical,efficient and convenient fresh-keeping method to push fresh trichiurus lepturus products into the market and meet consumers'nutritional needs is extremely important for the market retention rate of trichiurus lepturus products.In this paper,Zhoushan trichiurus lepturus is used as the experimental material,and the trichiurus lepturus is grouped by freezing point detection and dynamic electric field intensity measurement.The electric field intensity is used as the independent variable,and the quality,protein,moisture,and microbial indicators are used as the dependent variable to explore the electric field to keep the trichiurus lepturus fresh during micro-frozen storage.The effect of the effect,analysis and comparison of the effect of different electric field strength on the preservation effect,provide a new theoretical basis for the preservation of trichiurus lepturus.1.Using Zhoushan trichiurus lepturus as raw material,place the trichiurus lepturus at-4?and compare different electric field strengths(DY1-0 kv/m,DY2-2 kv/m,DY3-2.5 kv/m,DY4-3 kv/m)Effect on the quality of trichiurus lepturus within 40 days.The results showed that the p H value of trichiurus lepturus all decreased first and then increased.The content of TVBN,malondialdehyde,juice loss rate,and the total number of colonies showed an upward trend,while the K value and electrical conductivity showed a continuous downward trend.There was little difference in the data between the groups in the early storage period.The fresh-keeping effect of DY2,DY3 and DY4 in the electric field group was better than the control group in the middle-term storage,and the fresh-keeping effect of DY4 was relatively better in the late storage.Through sensory and instrument testing,it can be shown that the electric field has a significant effect on improving the quality of trichiurus lepturus.2.The effects of different electric field strengths(DY1-0 kv/m,DY2-2 kv/m,DY3-2.5kv/m,DY4-3 kv/m)on the protein structure characteristics of Zhoushan trichiurus lepturus during 40 d micro-freezing storage were studied..It was found that the four groups of trichiurus lepturus myofibril protein content were 19.54 mg/g,25.35 mg/g,28.76 mg/g,and31.21 mg/g at 40 d.The content of DY1 without electric field treatment was the lowest,with total sulfhydryl groups,surface hydrophobicity and surface hydrophobicity.The results of Ca2+ATPase also confirmed similar results.On the microscopic level,there are holes of different sizes in the muscles of DY1,the cell structure is dislocated,and the entire muscle fibers are severely damaged.The electric field can effectively reduce the degree of damage to the protein structure,slow down the protein degradation rate,and maintain the higher protein characteristics of the trichiurus lepturus during the micro-freezing storage process,and the high-field electric field has a better fresh-keeping effect.3.The influence of electric field(DY1-0 kv/m,DY2-2 kv/m,DY3-2.5 kv/m,DY4-3 kv/m)on the water migration of Zhoushan trichiurus lepturus within 40 days was studied.The results showed that water migration occurred in the trichiurus lepturus,and the peak areas of T21,T22,and T23 all decreased to varying degrees.Among them,the signal amplitude of T22 has the largest change,followed by T21 and T23,and the three peaks have a tendency to move to the right.The area and ratio of the peaks of DY4?DY1 show a decreasing trend.After 40 days of storage,the MRI image of the DY1 group completely turned blue-green,with serious water loss.Most areas of DY2 and DY3 were yellow,and the red disappeared.Only the DY4 group had sporadic red,which confirmed the NMR transverse relaxation time T2 trend.Towards.It shows that the electric field can change the water migration path in the trichiurus lepturus,maintain a higher water content,and increase the water holding capacity and water retention of the trichiurus lepturus.The higher the electric field strength,the stronger the water holding capacity.4.Use Miseq genome sequencing technology to sequence the base information of the microbial community of Zhoushan trichiurus lepturus stored for 40 days,and the generated base sequence is used to analyze the microbial community that affects the preservation effect of the trichiurus lepturus by means of OTU clustering,diversity analysis,and correlation analysis.Composition and development information,to study the influence of different electric field strengths(0 kv/m,2 kv/m,2.5 kv/m,3 kv/m)on the composition of the trichiurus lepturus microbial community.OTU cluster genera mainly include Shewanella,Pseudomonas,Pedobacter,Arthrobacter,Acinetobacter,Janthinobacterium),Brochothrix,Psychrobacter,Caulobacter,presumably Shewanella,Pseudomonas,Janthinobacterium It is the main spoilage fungus that causes microbial spoilage of trichiurus lepturus.
