Solenocera Crassicori is also known as red shrimp,It is mainly distributed in the southeast coastal area of china.It can be used as a diet or as a medicinal material,which is extremely beneficial to human health.In view of the widespread distribution of microorganisms in the living environment of marine shrimp,under the influence of various factors such as storage,transportation,and processing,it is easy to lose the value of use,causing resource waste and economic loss.In this experiment,Solenocera Crassicori was selected as the research object,and the low-temperature plasma was used to studied the microbial control during its storage period at 4? and the quality change before and after the treatment.The comparison and analysis of the changes of various indicators such as the quality law before and after the lowtemperature plasma treatment further reveals the fresh-keeping mechanism of the lowtemperature plasma technology on the Solenocera Crassicori.The specific results are as follows:1.The effects of cold plasma on the sensory and basic nutrients and various quality indicators(texture,color difference,p H,TVB-N,amino acids,microstructure,PV,TBARS,protein properties)of shrimp were studied.The results showed that the overall sensory score of the treatment group was significantly better,and there was no significant impact on the basic nutrients(protein,fat,moisture,and ash content)of Solenocera Crassicori.During the storage process,the overall preference for texture properties and color difference values of the treated group,while the untreated group loses luster,has no bending tension and elasticity;during storage,the p H of the body first drops and then rises,and the treated p H can be effectively controlled;TVB-N content in the untreated group increased significantly,and decreased significantly after treatment;after 4 days of treatment,the total amino acid content did not change much;the scanning electron microscope results showed that the myofibril tissue of the untreated group was looser and rougher,and the treated group was more loose and rough.There is little difference between the samples,and the fiber structure remains compact;the plasma treatment accelerates the oxidation of lipids,and the PV value and TBARS value of Solenocera Crassicori are higher than those of the untreated group;compare the thermal stability and protein thermal stability of the protein before and after plasma treatment The influence of molecular weight,it was found that the denaturation temperature was significantly higher after treatment and the enthalpy change value gradually decreased with the increase of the treatment voltage;there was no significant difference in the distribution of protein molecular weight before and after treatment.2.Explore the changes of microorganisms before and after the low-temperature plasma treatment,and further analyze the changes in the bacterial phase of the dominant spoilage bacteria during storage.The results showed that the total number of colonies in the untreated group increased sharply on the 4th day,and the total number of colonies was 6.47±0.13(lg(CFU/g))and 7.19±0.13(lg(CFU/g))on the 6th and 10 th days of storage,respectively.The total number of colonies in the treatment group was significantly suppressed.In the untreated group,the predominant spoilage bacteria gradually isolated in the late storage period were Pseudomonas and Shewanella.The composition of the bacterial phase after low-temperature plasma treatment fluctuates slightly,mainly Aeromonas and Shewanella.3.Analyze the changes in volatile components of Solenocera Crassicori at the end of storage.The results showed that 42 kinds of volatile components were distinguished at the end of storage,and sulfur-containing compounds emitted the most odors.Most of them were marked by aquatic products,and the gas changes were the most obvious.Comprehensive analysis of electronic nose and GC-MS shows that this result has a certain degree of compatibility with the measurement results of microbial indicators and volatile base nitrogen indicators.
