At present,walnuts are widely distributed in China.Xinjiang is China’s largest walnut production base,mainly in Kashi,Aksu,and Hetian regions.The walnut oil content is as high as 60%,but walnut oil is prone to oxidative rancidity during storage.Lycopene is a kind of natural antioxidant.Put waste tomato dregs into walnut oil,and enrich lycopene in tomato skin dregs in walnut oil to obtain functional oil,which can not only play an antioxidant role It can also promote the absorption and utilization of lycopene in tomato skin dregs better,which has certain practical significance.The main research contents and results are as follows:(1)The tomato dregs were placed in walnut oil and enriched.On the basis of single factor temperature,solid-liquid ratio,and time test analysis,a 3-factor 3-level Box-Behnken response surface test was used.After response surface experiment,the optimal conditions for the determination of lycopene enrichment after regression optimization and verification were temperature 70°C,time 60 min,ratio of material to liquid 1:6(g/m L),and the yield of lycopene reached maximum at this time.122.49 ?g/g.(2)Ultrasound-assisted enrichment of lycopene in walnut oil residue in walnut oil,and a preliminary study of its technological conditions,the response surface can be used to draw the best lycopene in walnut skin oil in walnut oil The process conditions for the enrichment were material to liquid ratio 1:6(g/m L),ultrasonic enrichment time 30 min,ultrasonic output power 200 W,and the average yield of lycopene was 152.52 μg/g.Ultrasound-assisted enrichment is a rapid and efficient method for enriching lycopene compared to ordinary enrichment methods.(3)Microwave-assisted enrichment of tomato lycopene in walnut oil was optimized,and a quadratic regression model was established between the response value and each factor.The response surface can be used to obtain the best concentration conditions of lycopene in walnut oil in walnut oil.The ratio of material to liquid is 1:5(g/m L),microwave irradiation time is 40 s,and microwave power is 400 W.The average yield of lycopene at this time was 153.35 ?g/g.The lycopene enrichment process in walnut oil was compared by ultrasonic and microwave assist.The results show that the microwave-assisted ultrasound-assisted technology can shorten the enrichment time,reduce the amount of solvent used,save costs,and have a higher yield than ultrasound-assisted enrichment.The use of microwave-assisted lycopene walnut oil,compared with the value of peroxide and acid value of walnut oil without lycopene,to study the different temperature,light conditions,air of walnut oil and lycopene walnut oil Effect of storage stability.The results showed that under the conditions of 15°C,light and sealed,the oxidation of lycopene walnut oil can be effectively delayed. |
