Morchella importuna is rich in various amino acids,polysaccharides,melanin,saponins,ketones,aldehydes,esters and other active substances required by the human body.Its nutritional value is rich,and it has obvious anti-cancer and brain-building effects.It enhances human immunity and is the main strain of artificial cultivation in China.In recent years,with the maturity of artificial cultivation,the yield of artificial cultivation of M.importuna has also increased significantly.This article mainly optimizes the extraction process of melanin from M.importuna,and performs amino acid modification on the extracted melanin from M.importuna.At the same time,the physical and chemical properties of melanin before and after modification are studied.The functional research and development of M.importuna provides basic theoretical basis.The main results are as follows:The cellulase-ultrasonic wave synergistic extraction technology of melanin from M.importuna,and the best extraction process for melanin from M.importuna was obtained through single factor test,PB test and response surface method: NaOH concentration 1.54 mol/L,the added amount of cellulase is 20mg/g,the cellulase digestion time is 78.6 min,the material-liquid ratio is 1:30,the cellulase digestion temperature is 40?,and the ultrasonic time is 80 min.The extraction rate is 10.003% and the color value is 480.24.By scanning the ultraviolet spectrum of melanin,the maximum absorption wavelength of melanin is 230 nm,By scanning the infrared spectrum of melanin,there are infrared absorption peaks at 2292.28cm-1,2852.62 cm-1,1631.58 cm-1,1589.34 cm-1,1512.18 cm-1,1384.13 cm-1,and 1349.67 cm-1.It is speculated that C-H,C = C,C = O,-NH,-COOH,C-N,CH2,CH3,indole structure;by scanning electron microscope of melanin,melanin has a lumpy,irregular crystal structure on the surface.And black has good thermal stability,light stability and alkaline stability.Amino acid modification was performed on the extracted melanin from M.importuna,and the water solubility of lysine-modified melanin reached 1016 g/L,and the color value was 1771.183,and has good stability.By scanning the ultraviolet spectrum of lysine-melanin,the maximum absorption wavelength of lysine-melanin is 219 nm.by scanning electron microscope of lysine-melanin,lysine-melanin has a lumpy,irregular crystal structure on the surface.
