Abstract/Summary:
Ultra Rice(TM) is a manufactured rice product fortified with Vitamin A. The objective of this work was to redesign the protective antioxidant system in the matrix to prevent vitamin A degradation through storage.; Twenty formulations of Ultra Rice(TM) were prepared and tested for stability for 24 weeks. The samples were kept at 25°C, 35°C and 45°C with 100% relative humidity.; The three best formulations retained nearly 80% of the vitamin A after 24 weeks at 45°C and 100% RH. These contained butylated hydroxyanisole (BHA) and butylated hydroxytoluene (BHT) as hydrophobic antioxidants, ascorbic acid as a hydrophilic antioxidant, citric acid to chelate metal ions and sodium tripolyphosphate (STPP) to stabilize moisture. These improved formulations were much more effective in retaining vitamin A, and were less expensive than the original Ultra Rice(TM) formula.
